LOTS of veggies and fruits. Do not replace the missing meat with carbs. Have

you read any pro-veg books? They can really help you know what to eat and how

much. Also, someone posted a vegetarian food pyramid that was a bit helpful.

Congrats on the switch. I really am glad I made it (6 months and 15 pounds

gone)

Hi everyone - I enjoy eating veggies...

Unfortunately I mainly just boil, steam, grill or stir fry.

Would love to learn how to be more creative with my cooking. Hoping this

group might spark some creativity into my cooking. My husband will thank you!

'm also a newbie who had " dietary needs " daughters (not to mention

myself!), but nothing near as drastic as your situation, Amanda. I

wish you the best with your new food discovery journey!

 

My situation is somewhat mundane. My daughter was diagnosed with high

cholestorol at 2 yrs old, proving that it can be hereditary! We

followed the doctor-recommended " lean meats, low fat milk, etc etc " ,

yet she was recently found at her 7 yr check up to have a cholesterol

rating of 215. I've been taking cholesterol lowering meds for years,

since they realized that my numbers were not getting better with

dietary change.

 

About 4 wks before her last blood test, we had become (lacto-ovo)

vegetarians, so her results prompted the need to eliminate any food

of animal origin. We are now a total vegetarian household, figuring

that if me and DD#2 have high cholesterol, then DD#1 probably has,

too. I don't know why I haven't had her tested, I will do at her 9 yr

check up in October, though.

 

The transition was not easy for my picky daughter! She doesn't like

soy milk or almond milk, the only milk she will drink/eat with her

cereal is vanilla rice milk. Not a problem there, it's easily

available. She loves pasta but, up until yesterday, would NOT eat the

wholegrain variety. She also loves soba noodles, so I guess that's a

bonus! The girls are both still eating regular school lunches, as I

haven't yet found anything they like that I can pack in a lunch, and

the feel self-conscious if they are not eating " what the other kids

eat " . I'm looking into changing that soon, but I figure that as we

are eating healthy at home, that's a huge start!

 

I'm reading Eat to Live, then will read Dr Fuhrman's book on raising

disease-free children - hoping that will give me some pointers!

 

My biggest problem is that, being a single Mom, I'm on a very tight

budget, and the girls love to shop at the local health food shop.

While I love being able to buy from the bulk bins, I really have a

problem with paying $6 for a box of organic cornflakes! I am lucky

that our local Meijer store has a great selection of vegan items. I

grow a lot of our veggies, all three of us have our own (square foot)

veggie gardens, plus we have a couple of plots at the local community

garden, and it's great for the girls to see that whole " seed to

table " process, as well as reap the health benefits of organically

grown veggies.

 

I'm also enjoying the Eat To Live group, there are some great

discussions there!

 

OK, I'm ranting ... thanks for listening, and I know I'll get some

great information from this group!

Is there a Trader Joes near you?  They have a few organic cereals at much lower

prices than health food stores (which tend to be even higher than whole foods,

though I like supporting independent businesses).  You may be able to find a

food-buying coop in your area; this can also cut down on costs.

I've been campaigning for a TJ's in our town for the past 10 years. We

have the perfect demographic, but apparently we're too far from Chicago!

 

We just had a new health food shop open up, and the prices are fairly

comparable with the original (smaller) store we have - so no help

there. They do, however, have a greater range in the bulk bins. And

these are a little less expensive.

 

I try to get to TJ's every 6 months or so - I'd like to go more, it's

only a 2 hour trip to our closest store, and maybe when the cost of

gas is less of an issue, we'll go more :)

We are fortunate to have a full range health food store close by (frozen,

produce,refrigerated).

There is the farmer`s market all summer until October. Then there is a winter

farmers

market that is inside. We also are going to have a coop (fiddleheads) opening

soon..hopefully.

Hello ladies & gents. I recently joined your group because I want to

change my eating habits to include healthy no-meat meals. Even at my

age of 60+, I figure it's never too late to change my ways!

 

Anyway, that's where this group comes into the picture for me. I don't

know enough about which foods to eat to have a nutritionally balanced

vegetarian meal. So, I'm looking forward to reading recipes and helpful

I guess I'm one of the lonely one percent of the list who also loves

opera. No ewwwwww out of me! :-)

(I also love contemporary classical music, which would probably put me

into a small fraction of a percentile....)

I also love opera.  A friend of mine turned me on to it a few years ago.  I've

only seen a few but I love the music.  Opera singers fascinate me.  The way they

use their voice as an instrument is so beautiful.

Hi VegDeb, glad you are here. Even moreso, I am glad someone who approves a

vegetarian diet is working toward a Diet and Health degree. You would not

believe the number of nutritionists and even doctors in the US who have tried

convincing me that a vegetarian diet wasn't healthy for my diabetic husband and

me. ARGH! (Rant over for now.)

Hi Jeanne,

 

Glad you brought this up. My dissertation is actually on dietary choices and the

knock-on affects this can have in other areas of our lives (i.e. discrimination

due to misunderstanding, social exclusion, etc.)

 

I'm actually just writing a post, which contains a short descriptor of my

research, along with a link to my questionnaire-it would be great if you could

fill it out for me!

There is no reason for you to fail. Go to our files and see our recipe

collection with thousands of recipes all sorted into groups.

Don't think of it that way. Any change in your diet at all, even if not

completely veg, would be a success.

Iv e been a vegetation for 3 months. I have really enjoyed the recipes

through this group and the support. Honestly, I don't even miss meat and I

feel so much better since I changed my diet. Keep a positive attitude and

you won't fail!

What kind of soy did you try that you didn't like? If you drink milk, you

might like the Silken Soy flavored milk. The chocolate is really good.

Start out with small steps!

Lucky you. My wife is a crusading carnivore and tries to force me to eat meat

from time to time. It's not all bad. I'm normally the cook, so when she wants me

to eat meat, she has to take over in the kitchen for the night. Sort of a good

news bad news thing. One thing I'm surprised I do not like are the fake meat

veggie burgers, etc. It makes me miss the real thing. I would rather have a big

portobella cap than a soyburger any day.

If you crave them try the Quorn products..... oh here i go again people

are probably thinking, LOL, but I can't help but preach about Quorn. It

is not made from Quorn, it is made from a mushroom similar type fungus.

check out their website. i have tried every product they have and I love

every one. for stirfries, ground " meat " " meatballs " chick'n patties, omg

it is all so good. i take some of the crumbles and fry them in a pan in

a bit of olive oil and a sprinkle of garlic powder. Then I put some

cheese on top, and this makes it stay together, and I put it on a

hamburger roll or bread if i have no rolls. Tastes just like a burger

only better, no grease.

The chick'n cutlets are great with any recipe that you would normally

use the real thing with. I like taking the cutlets and shaking them with

some shake and bake buffalo, and bake for like 25 minutes covered with

foil at 325 or 350.

Dip in bleu cheese. 9make sure that bleu cheese has no rennet though.)
