Actually, the absolute best way to get any nuitrition is from the food you eat.Vitamins and minerals that are concocted and then treated as natural pose a real danger to the health illiterate community as well as those of us too lazy to or complacent to use our basic high school health information to our long/short term benefit. With the passage of the industrial era, particularly here in the west, the masses have come to see tha grocery store as the food origination source. I am also an elementary school teacher, and I see this as a growing concern even among the very young. They watch their parents and other adults whom they respect, and pretty much come to the same conclusion. The healthier among us still live closer to the soil. . . .but I do see where you are going. Rumford is the brand I use, and it's aluminum-free. The aluminum slows the reaction some. Fructose is a highly processed derivative of corn syrup. As far as i know it is a vegetarian product, though recently a person on another list questioned the company that makes it, and while they said the pectin was vegetable/fruit in origin, the company would not say that everything in the box was from animal-free sources 100% of the time... but typically it was. My feeling on this was they were just afraid to say 100% all the time because of the remote possibility of being sued if they were to change the make-up of their product. i am a dietary lacto-ovo vegetarian so i would feel alright about using pectin in a recipe, but maybe some ethical vegans would not. But it is okay, in my opinion as this list's moderator for you to share a recipe with pectin in it.
