Fresh Soy Milk

2 cups dry soybeans

5 cups water

12 cups water

 

Makes 10 to 11 cups

 

This makes a good milk for everyday purposes. For a lighter milk use more

water and for a richer milk use less.

 

1. In a large bowl, combine soybeans and 5 cups of water. Cover and soak

at room temperature for 10 hours, or overnight. (If you're not ready when

the beans are, change water and refrigerate until ready.)

 

2. In a large pot, heat the 12 cups of water until very hot.

 

3. While the water heats, prepare your work area. Line a large colander

with a piece of thin muslin cloth (at least 2 feet square) or a double

layer of cheesecloth. Place a large mixing bowl beside your blender.

 

4. Drain and rinse beans. Place 1-1/2 cups of beans in blender and add 3

cups of the hot water. Puree until beans are tiny particles and water

turns milky, 15 to 25 seconds.

 

5. Pour puree into large mixing bowl and repeat process until all beans

are blended. Add any remaining hot water to the bowl of puree.

 

6. Place the cloth-lined colander into the large pot that you heated your

water in. Carefully pour the puree into colander. Gather together the

corners of cloth, twist to secure the pulp, and carefully squeeze the ball

of pulp to extract the remaining milk.(If it is too hot to handle, use a

large spoon to press it against the colander.)

 

7. Reserve pulp (okara) for another use. Heat milk until it begins to

boil or foam up, stirring often with a whisk to prevent burning. (If it

burns, the milk will have a strong flavor.) Reduce heat and simmer 7 to 10

minutes.

 

8. While you wait for the milk to boil, clean up your kitchen. (Dried soy

milk and pulp can be difficult to clean off counters and pots.) To clean

out pressing cloth, remove the pulp, vigorously shake cloth outside, then wash.

 

9. After milk cooks, bottle and chill. Will keep 3 to 6 days,

refrigerated, or can be frozen.

 

Variations: Make the following additions to one quart of milk

 

Simply Sweetened: 1-1/2 tablespoons natural sugar

 

Maple: 1-1/2 tablespoons maple syrup

 

Carob: 3 tablespoons carob powder, 1-1/2 tablespoons natural sugar

 

Chocolate: 3 tablespoons cocoa powder, 3 tablespoons natural sugar, 2

teaspoons vanilla extract

 

Mocha Latte: same as chocolate plus 4 ounces very strong coffee and a pinch

of cinnamon

 

Molasses: 3 tablespoons molasses

 

Vanilla: 3 tablespoons brown rice syrup, 2 teaspoons vanilla

 

The leftover pulp, called " okara, " is primarily the soybean fiber. Your

garden soil and compost pile will love it, but it also makes great food for

people! Its texture is reminiscent of fresh coconut, yet it is low in fat

and high in fiber. The simplest way to utilize it is to add a cup to

grains, soups, stir frys, or baked goods.. Whenever using fresh okara in

recipes, be sure the okara gets cooked at least 6 minutes, to destroy the

soybean trypsin-inhibitors (an enzyme which interferes with the digestion

of protein.)

 

If you won't use it within a few days, you can parch it. Spread it on an

ungreased baking sheet and bake at 350ø, stirring a few times, until dried,

about 10 to 15 minutes. You can also dry it in a skillet over high

heat. Use parched okara as you'd use toasted wheat germ. One batch of the

soy milk recipe (using 2 cups dry soy beans) yields about 3 cups of fresh

packed okara.

 

VEGAN

PER CUP: 79CAL (52% from fat), 7g PROT, 5g FAT, 4g CARB, 29mg SOD, 0mg

CHOL,3g FIBER.

I beieve the terms 'soy milk, soy drink & soy beverage' are all

interchangable. What is actually in them can vary radically, some

ingredients added to the plain milk may include oil, malt, salt, apple

juice or many others and therefore flavours can vary widely. Some soy

milks can be quite thick, while Light (or " lite " ) versions usually do

not include any oil and have more water in them and are therefore

thinner. It's just a matter of trying a few to see which you prefer.

I tend to go for brands that have no GM ingredients, and are preferably

organic.

 

Of course, TWIAVBP (the world is a very big place) and the meaning of a

lot of terms are different in the US than in Australia, so YMMV (your

milage may vary).

As I am not a full fledge vegetarian anymore, I stillm prefer soy milk over

cow's milk. Whenever I have to drink cow milk, it always tastes rotten, or

bad. i am a full fledge soymilk*vanilla flavored girl.. I tired rice milk,

but that was rather yucky. i stick to Sun Soy or the evil silk brand.

i hate silk, too. i had trader joe's strawberry soy milk and i

thought it was great. i typically drink vitasoy. 8th continent is

very good too. so is sun soy. westsoy is ok.

 

I think it's all a big conspiracy the way grocery stores stock silk

like crazy. they don't want people to buy healthy food. just like

gardenburger, it takes like a raw onion! Dubbya and his corporate

puppetmasters strike again! super d

When I still drank cow's milk, I bought the nonfat and got use to the weaker

taste. When I began drinking Silk soy milk, it was way to rich.

 

Now, I buy a half gallon container of Silk and divided it equally between 2

half gallon pitchers. Filling them both up with filtered water, I have a

full gallon where there was only a half. The weaker taste is just fine for

me, and for those looking to lower the cost that's a 50% savings.

 

I actually made soy milk from scratch for a while. That was way cheaper,

but much more trouble than I wanted every two days.

I was curious what brands of refrigerated soy milk most people liked. When I

started buying it I bought " Silk " brand which is the one grocery stores

think they should stock. I found it had an aftertaste that overpowered foods

and shakes. I now buy " Vitasoy " which I think is so much better but is hard

to find in the grocery stores. Has anyone tried Trader Joe's soy milk?

Give me a break. Bush is responsible for grocery

stores only selling silk and gardenburgers? I

wouldn't normally comment on this, but some of the

statements lately have been beyond ridiculous. I'm

not flaming you, or trying to insult you. But, come

on, can we PLEASE refrain from this constant

nonsensical rambling and constant blaming? It's

really not funny and doesn't make any sense.

bush, but i don't think he's responsible for everything wrong with

the world. sorry if you don't find it amusing, but aren't you the

i am just so sick of hearing democrats blamed for this and that, and

people claiming the media is " liberal " - it is liberal only compared

to this insanely right-wing administration.. so i decided i would

alleviate this disgust by fasciously blaming Bush for everything for

awhile. but i'm not a democrat, i'm a green, and i'm even more sick

of hearing people blame nadar for gore's loss. so i am sorry if i

irritated anyone. i will return to seriously criticizing Bush for his

many real faults. but if my, or anyone else's posts irritate you so,

why do you continue to read them? when he was here, Mr. stewart's

posts were getting old to me after awhile, but instead of telling him

Gene would change the subject heading. I was reading

the thread about soy milk b/c I'm genuinely

interesting in that topic. It's when I got to the

part about this soy/gardenburger conspiracy is when I

became a bit annoyed. But yes, media is biased. CNN

is liberal, FOX is conservative. The Washington Post

is liberal, The Washington Times is conservative.

That's just the way it is. When I commented on it, I

simply commented that I wouldn't rely on one side's

perspective. Chances are, there's another news

station and paper that would shed light on the

opposite view.

I figured you weren't a Democrat. You're Green, I'm

Libertarian.

Hey, Dave4. I think you're doing just fine. Call 'em the way you see them,

bro. After a while you'll get to know what the various people mean when

they seem to be insulting or offended. Often that's not the case. If

you're still worried, then ask them off-list.

To answer the original question in the original post, I like Trader Joe's

soy milk. It's what i usually buy unless Silk or my other fave brand,

Naturally Preferred, are on sale.

I just don't like drinking ANY milk; never have. When I buy milk now

it is just

for cooking or for my kids to use on cereal b/c they don't even like

to drink the

stuff. I have bought soy before to use for smoothies but I don't

remember the

brand. It seems to have more calories that non-fat milk and I was

wondering

how it rated on calcium content?

 

I don't know if I could get my children to use it on cereal instead

of regular

milk, but the personal preferance info has been interesting. Thanks

for

posting which ones you all like. I guess I am going to avoid that

SILK brand

from now on.

I'm just the opposite. I LOVE milk - I drink as much as a litre a day,

most of the time. Cold, hot, mixed in things - I go through a lot of

milk. I tasted soy milk once, and it was awful (my father is lactose

intolerant, so he has it occasionally). Its one switch I can't see

More calories, and its just so thick and heavy too. I grew up drinking

milk we bought from the neighbors. It was pasteurized, but not

homogenized, and my father always skimmed all the cream off the top for

his coffee, so we basically drank skim milk. When I started buying milk

in the store, even 2% (and later 1%, when it became available) seemed

heavy and oily to me. But skim milk? Yummmmmm. (Over ice is even

better, though people get grossed out when they see my milk getting

thinner and paler as the ice melts LOL)

 

Recent studies I've read suggest that calcium supplements don't give

women the protection they need from osteoperosis and other bone

problems. If you're not getting it naturally, it would seem, you might

as well not bother. That would be a serious concern for me, since I

already have a debilitating joint disease. Strong, healthy bones are

pretty important to me, so if soy milk isn't going to give me adequate

calcium, I'm not even going to consider it. Does anyone have

information on the comparative calcium contents?

Fortified soymilks contain every bit as much calcium as milk. Read

the nutrition labels on the side of the box and compare. I prefer

Vitasoy myself, but it all depends on your taste.

 

As for milk and supplements, I would like to post a link I have

Me too, I'm afraid. Someone recently posted about having two one-gallon

jugs of soymilk - soy plus filtered water - as a way around the

too-strong taste or substance or whatever (sorry, I don't have the post

in front of me - I truly don't quite remember - I'm not trying to be

offhand of offensive, just absent-minded :=( me.) - and I thought How

Clever - and then I said to my dh, what *on earth* would any adult

person do with two gallons of soymilk in the fridge? He thought bathe in

it, a bit like a vegan Cleopatra :=)

 

I keep soymilk in for cooking - and for the kidz cereal, as it were, the

kidz being the beagles. As for those who drink 'milk' - if you don't

like the taste of some of them, why bother, I wonder. Just me :=(

Perhaps it's a hold-over from dairy industry propaganda that we feel we

should drink milk or, in my case, feel we need to justify why we don't -

even if the 'milk' in our case is soymilk ;=)

 

And sorry, I didn't mean or want, by this post, to start a whole

controversy. If you drink it you drink it and are entitled to do so -

it's good for you, being soy, and certainly does no one, human creature

or any other creature, any harm.

That was me...in case I mistyped it...it was two " half " gallon pitchers.

 

Luckily, Silk is good for about two months or so, and that's about how long

it takes for me to use the whole gallon. BTW, I have a 2nd fridge in the

garage, which makes longer term storage a bit easier and more convenient.

made it *quite* clear what you meant! Sorry for the confusion - and for

seeming to make your idea foolish. I didn't think it was - I thought it

was very sensible - just that it seemed like a lotta soymilk ;=)

just in case anyone isn't aware there are fat-free soy milks. they

are sold in a box on shelves, not in the refridgerated section. i

don't like them because i like my milk thick. westsoy seems to be a

bit thinner than other soy milks. i'm sorry i don't know the calorie

content. i know they also make unsweetened soy milk. that probably

has very low calories. i also question use of the word " natural "

when referring to cow's milk as a calcium source, it is after

all, " meant " for cows not humans.

i've tried that westsoy unsweetened soymilk (it's the

only i know of that doesn't have any added sweetener)

and it tastes horrible! lol i was on a no-sugar (and

no dairy) diet for awhile and ended up making my own

almond milk.....which was thin but tasted much better

than that westsoy. i can try to find the recipe for

the almond milk if anyone wants it.

i'm not on the sugar-free diet anymore and now use

vanilla silk. my 3 year old loves it!

IMHO, the best part about soy milk is it keeps so much longer than

cow's milk. I had stopped drinking milk altogether because it was

always going bad before I could drink it.

 

One downside: my kitten will NEVER forgive me :)

He might be mad for a while, but he'll get over it. Cow's milk isn't any better

for him then it is for us!

cow's milk. I had stopped drinking milk altogether because it was

always going bad before I could drink it.
