hidden ingredients in foods and stupid questions like, "where do you get your protein from?"

2000 vegan recipes, searchable by ingredient and country, on

world [you don't say where you live, so i can't be more specific than

that]. also check out <www.vegansociety.com> for good advice on

nutrition, especially B12 which is the only thing you really need to pay

a little attention to [there's also a nice article on vegan health

which mentions friends and fun as being just as important as vitamins

and stuff]. ignore idiots who say you'll turn into a protein-starved

anaemic wimp - suggest they go have that argument with a gorilla...

enjoy your life - and the fact that you're living it without exploiting

or damaging others.

I found it a lot easier when I concentrated on what I could eat rather than

what I couldn't. Easy peasy..!

Dr McDonald,

 

I find your desire to drink urine to be both anti-vegan, bizarre, and

disgusting. You need to really disturbed to try something like that. Do you

get off on that? I bet you're one of those people that like to dress up like a

cat a run around in the forest. They're crazy, and so are you.

Welcome - you picked a bad day to join - we've been invaded by some very nasty people today - but if you look at the archives, you'll see it's not normally like this. The majority of people here are vegans - vegetarians are also welcome (as long as they understand that we're primarily vegan).

Yes it is - it's just been a bad day. Hopefully it is all sorted out now. Mostly the discussions are polite and friendly, sometimes amusing, and with a bit of luck Fraggle will send in the odd recipe.

BLACK BEAN, CORN AND PUMPKIN STEW

1 tsp cumin seeds (or ground cumin)

2 cloves minced garlic

1 tsp paprika

2 c thawed frozen corn kernels (or fresh)

2 c winter squash (pumpkin or acorn) cut into 3/4" dice

(I like to use the acorn squash)

1 16-oz can (2 cups) plum tomatoes, chopped, reserve

juices

2 cups vegetable broth

2 16 oz cans black beans, drained and rinsed

Salt and pepper to taste

12 oz medium wide vegan noodles, cooked and drained

2 jalapeno peppers, seeded and finely minced

1/4 c toasted sunflower or pumpkin seeds, optional

(I use sunflower seeds. A nice crunchy addition! )

 

Heat 1/4 cup olive oil until hot (or spray pan with olive

oil spray and heat). Add red pepper and saute for a few

minutes and add the cumin seeds and saute for a few

seconds until you get whiff of their aroma. Add the

garlic, oregano, cinnamon, cloves and paprika and saute

for a few seconds until aromatic. Add corn, winter squash,

tomatoes with their juices, and the broth and bring it all

to a boil. Cover and simmer for 15 minutes or until squash

is almost tender. Add beans, cover and simmer until for 5

to 10 minutes until squash is completely tender. (If

liquid seems to be evaporating too much, add more water.) Season to taste with salt and pepper (I leave out the

salt) and spoon over the cooked noodles. Garnish with the

minced jalapeno peppers and the toasted sunflower seeds.

Enjoy! Serves 4
