It's easier for us since my husband and I are vegan and my son has been vegan from birth. PETA has great resources as well as PCRM(Physician's Committee for Responsible medicine). I'd sit down with him and make a list of things that he knows that he likes and then take him to a veggie potluck dinner. In the meantime, yes more than the PB & J can be sent to school. If he likes burgers you could send veggie burgers or veggie hot dogs. Some people don't like the thought of mock meat. He might like carrots and dip. Try hummus, most kids love it. Soups are easy to put in a thermos. Fresh fruit for the sitter. I don't know what kind of health food stores you have near you. It would be helpful to see what is available there. You might be interested in getting a vegetarian kids cookbook or maybe the book " Becoming Vegetarian " which explains how to get what you need without eating meat. They also don't want hurt animals. There are lots of great and easy cookbooks in bookstores and even in libraries. You can find fun and delicious food for him. You should be proud of him for making a wonderful and healthful choice. It could be fun for you and him to learn together. But the more I read and research, the more I'm suspecting that I may go vegan. My family of meat eaters is very supportive of my switch, but I don't like to talk too much about it with them because I don't want to push them away. The reason I decided to become vegetarian is because on New Years Day, in the evening, I was reading a news article on about a young man that had his name legally changed to kentuckyfriedcruelty.com. My curiosity got the better of me and and I went to his website of the same name. I watched the video and read the material and decided to stop eating at KFC. I couldn't bear the thought of what those poor chickens are going through. The next morning was my 36th birthday. After I made my morning cup of coffee complete with cream I sat down in front of my laptop and started reading more on the kentuckyfriedcruelty.com site and found my way to the PETA website. It was all over by then. After watching a few videos on factory farming practices with pork and beef.....I was sick! At that moment I gave up eating all meat. I kept eating eggs occasionally and dairy products here and there. But the last couple of days I've been researching dairy stuff and I'm not liking what I am seeing. I was totally unaware that there was a pus standard for milk!! GROSS!!! The yuck factor alone is pushing me to the vegan side. I went out today and purchased some organic soy milk and I'm having a hard time even wanting to eat my yogurt, that a few days ago, I was okay with eating. Not start with vegetarianism along the way? That seems like it will be extremely hard. I know my nephew was a hardcore Big Mac eater and covered everything with a pound of cheese. It was a gradualy change and not he's off cheese and dairy and eats egg whites, didn't want to try any veggie burgers at first and not he loves them. His cholesterol is normal now and he has energy. Have you started with soups, spaghetti, some of the baked pasta dishes, beans. Look in the crockpot file also. What are some if the types of foods everyone does like, maybe we can help you with some recipes including those foods? For example, any casserole, Mexican dish etc. that they make with hamburger, substitute crumbled veggie burgers or reconstituted TVP. Speaking of TVP, it is real easy to make a vegan " pulled pork " sandwich with TVP/TSP. Reconstitute a cup or so of TVP chunks in hot water for about 10 minutes. Grind the softened TVP in a food processor in bursts so you have pieces, but not long enough to make tiny pieces. Heat the TVP pieces in barbecue sauce and pour over hamburger buns. I had previously posted an easy " recipe " for kielbasa, which should be in the files, basically using commercial vegan kielbasa. Tofurkey makes one. Suggest that they sign up for the Meatout Mondays weekly recipe and e-newsletter. My husband and I wear hearing protection (the kind that looks like earmuffs, but is used by construction workers) whenever we run ours. We also keep the doors and windows shut, so as not to disturb the neighbors. ;-) It's worth it, though. The Vitamix is just plain awesome! My machine needed a rubber cover for the four " feet " on the base of the machine. Between that and the new container my machine is probably more than twice as quiet as it used to be. It wouldn't just be the motor, but the actual processing of the food that would make a lot of noise. A Cuisinart makes a lot of noise. Guess you could use a knife to chop things finely but it would take a long time and a lot of energy. If you could learn to be ambidextrous you would get an awesome workout!
