As a veggie for 21 years, I also loath tofu in its plain state where it just

lays on the plate and taunts you with such a bland, nearling gagging taste.

For those you like the taste, I'm happy for you, but it's just not for me

that way.

 

However, tofu fits so nicely into hundreds of recipes. It's easily

accomodates most spices and enhances many dishes. Deep fried tofu assumes

the taste of whatever oil and spices you use. For example, try french-fried

tofu strips and eat them like french frys. Not exactly like potatoes but

not a bad taste.

 

The list of experiments is endless. Get your kids involved to test some of

them out. That's where the fun begins.

I crumbled up the tofu into little bitlets and fried it in oil with onions and

my spices for chili (which I would formerly have added to the chili itself) and

it was great! I think that, to add it to something, you need only to change the

order of seasoning so that the tofu is seasoned instead of the dish! works

great, and I have no idea how they can claim they " tasted it " !!

Try this for tofu-loathers....

I'd probably make it without the coffee for children. Then

it would be 'chocolate mousse' rather than 'mocha mousse'.

Mocha Mousse (adapted from a recipe in " Moosewood Restaurant

Cooks at Home " Cookbook)

 

In food processor, or using electric mixer, whip until

smooth and fluffy:

 

1 pkg silken tofu (such as Mori-Nu - the tofu that comes

in a little box and doesn't require refrigeration until

it's opened - either firm or extra-firm is fine. The

low-fat silken tofu is fine too.)

1/2 cup confectioner's sugar

2 tbs instant coffee granules

1-2 tbs cocoa powder (or more)

1/2 tsp pure vanilla

1 tbs brandy (optional).

 

Chill several hours. Serve with whipped cream.

 

(I like this best with the coffee, my husband likes it

better with more cocoa powder and without the coffee.)

Hi Dave, It is wonderful to have you here.

 

I agree with you about tofu; I think it is wonderful in dishes, but

yucky to just

eat plain. I will have to try some of the silken tofu dessert type

recipes and

just not tell the kids what is in it. But I swear if they see a block

of it being

added to a dish they balk. Some day they will try it and like it in a

dish; of that

I have hope and I am generally a pessimist. ;)

That sounds great! what about the brandy, though? I don't keep instant coffee

or brandy around! does it need it, you think?

I like it with the instant coffee and with the brandy - I

prefer the more mocha taste, but it's surely not necessary.

 

My husband prefers it without either. He's a chocolate

freak of the first order! Just give him chocolate all the

way....

 

Add a little more cocoa for a more intense chocolatey taste,

if you wish.

I like to garden.

I started posting on the Mycology list, wanting to learn,

and woke it up just as the owner was going to close it.

He's a nautical Archaeologist, so he's away from an isp for long

periods, which were getting longer and longer. SO he tried to give

it to me. I said nah, I'll turn on the lights and dump the garbage.

But you keep it and post when in town. THEN he forgot his password,

so we're moving the list.

 

I am trying to learn to grow agaricus, (common buttons,) but it turns

out they are pretty tough for amateurs, a commercial-Pro told me, who

joined. We also got a Pro from Paul Stamets' recently...

 

Some folks do grow shittake, from " kits. "

SOME shrooms have look-a-likes.

Some don't.

Some, only during a certain phase of growth.

A few years ago, the Dupont kid, rich, well educated, an experienced

shroomer, died from a poison shroom after (what I recall as,) 17 days

and as many blood transfusions.

 

There's a saying.

There're old _______. And there're BOLD ________.

But there aren't many old bold _______.

(I forget what was in the space.)

 

Some, like the death cap or white angel of death, looks like a common

button. Many cannot tell from the gills, and the stem, below

the " grass " is key, so once plucked, has destroyed the identification

of one, largely, as I understand it. The gills are veiled, and the

veil breaks low on these, and high on a button. You need a good

field guide, and preferably, an experienced shroomer, WITH you, for a

few years.

Congrats on your decision, Rainlily. Regarding your fiance's trouble with

eating some meats, I had similar problems, so I gave up red meat. I also

had occasional problems when I ate chicken, and after reading " Fast Food

Nation, " meat became less and less appealing, so I decided to give it up. I

wish the two of you the best and a happy (hopefully vegan) life together.

eating many meats. At the present time he will not eat hamburger,

hates fish, rarely eats ham or bacon, and will only eat chicken or

turkey if I will be home that night ( I work the graveyard shift). He

has gotten sick more than once off of chicken, turkey and hamburger,

and due to his anxiety disorder has taken an anxiety attack each

time. LOL he is also lactose intolerant so....I think as long as I

don't push or try to force him in that direction he will go that way

on his own.

The reason I decided to go Vegan is because i feel like a

hypocrite, or rather i AM a hypocrite, I love animals. I could never

kill a cow, or a pig or even watch one being killed, so why am I

eating meat?????I don't want animals to suffer or be killed just to

HI and thanks for welcome:) I agree with you. I wouldn't want someone

to try and force me into to something, so I would never do that to

him. Ofcourse I hope that he decides to stop eating meat, but if he

doesn't i will love him no matter what, i didn't fall for him because

of his eating habits..lol:)

Where abouts are you ? I distribute the free copies in the Santa Cruz

area, so if you're somewhere around these parts try the obvious

places: Dharma's, Staff of Life, any New Leaf, Saturn Cafe, etc. We

really need rs to keep this going though, and rs

get their copies before the free ones go out (hint, hint ;-)).

I think they have a Web site, vegnews.com. They might be able to tell you

how to get a complimentary issue, but the rest you're gonna have to pay for.

 

Too bad you don't see it on newstands.

i use to pick up veggie news at lanespliter in berkeley...

and, once er twice, at Cato's in oakland...

some friend's of mine just rode down to Captiola and went to Dharma's last saturday..was gonna go, but some sort er other delayed me...

Hey, we're virually neighbours !

 

The guys up in SF handle the bay area and I don't know exactly which

places are on their regular delivery list. SF and the south bay

probably get covered better than the east bay though, I would think

(Rainbow Grocery in SF would be a good bet).

 

You'll either have to or make more trips down to Dharma's. ;-)
