I'm not sure if the Farmer's Market they have downtown goes through the winter. I've never been there so I'm not sure what kind of stuff they have. I should check it out sometime. Did I mention that I'm considering moving to the South Bay? Do you know San Jose very well?

Anna

I have no idea where in San Jose. I'd like to find a nice artist's

community or something like that. I'm applying to San Jose State's

Master's of Library Science program.

I lived in San Jose 87-91. at that time downtown SJ was pretty cool.

Affordable, victorians, you could actually walk places. The rest was

mostly just sprawl. I remember Willow Glen being cute, but even then it

was getting popular so it's probably stupidly expensive now. Don't

know what affect the dot com boom/bust had on it.

hi everyone, hope you all had a good xmas.

im now about to from this list, im not able to stick to a vegan diet. ive tried very hard but find it too difficult.ive been veggie for 15 years and find that very easy, so maybe the time is not right. however i would like to think i will give it another go sometime in the future.

i look up to all of you, good luck.

may talk to you again sometime.

Thanks for the recipe. I use Ener G egg replacer sometimes - it seems to work okay.

Re: Eggs

Well, depends on what you're using the eggs for. Ener G egg replacer, mostly potato starch as someone mentioned, works pretty well for me when making muffins, etc. Vegan Vittles has a recipe for a mock egg salad made with tofu that I really like. (Ah, I had typed up the recipe. It's below.) This weekend I tried a french toast recipe also from Vegan Vittles. It was basically soy milk, whole wheat pastry flour and nutritional yeast whisked together and used as the egg coating for the bread. My only complaints with it is that I'd probably use a bit more flour to make it thicker (I don't like soggy bread) and possibly add a splash of vanilla. What sort of thing did you want to try and make? Laura---------Happy Hen SaladAmount Measure Ingredient -- Preparation Method-------- ------------ --------------------------------1/2 pound fat-reduced regular tofu (firm) -- rinsed, patted dry, and well

mashed1/4 cup vegan mayonnaise1/4 cup diced celery2 tablespoons minced fresh parsley2 teaspoons pickle relish1/2 teaspoon onion powder1/8 teaspoon turmericsalt and pepper -- to tastePlace all the ingredients in a medium mixing bowl, and stir them together until they are thoroughly combined.Serve the salad at once, or transfer it to a storage container, and chill it in the refrigerator.Recipe By: Joanne StepaniakSource: "Vegan Vittles"Copyright: "1996"Yield: "1 1/4 cups"On Dec 20, 2004, at 7:04 PM, Andrew Barnes wrote:

Hello James,

I was craving the taste and the texture of the eggs... as i tried to make ample

of tofu " egg " scramble recipes in the past. I added nutritional yeast, turmeric

and everything possible that makes it taste like the real egg, but with no

avail!

Good question James! It could be the omega 3 fatty acid, which can be much

better obtained from lots of green leafy vegetables, ground flax seed, squash,

cherries, kidney beans.

Hi Lisar, welcome!

I asked about eggs too when I first joined the veggie list. :-)

I was particularly worried about cholesterol levels because high cholesterol

runs in my family. Not only that, but I felt that my own cholesterol was higher

than it should be for someone my age and with my eating habits. (As a

comparison, my partner's cholesterol was about 30 points lower than mine, and we

were both eating the same kinds of food.) I feared that high cholesterol was

inevitable for me, and that following the RR program as a vegetarian might make

a bad situation worse.

I decided to trust RR and not worry about cholesterol, just to focus on getting

the right amount of protein at each meal. That means when I have eggs, I have

two AND I usually have cheese with it as well.

About a year after I started RR, my doctor's checkup found that my cholesterol

had dropped about 30 points so I was now comparable to my non-SS partner. I

can't tell you how happy I was (and am). It validated for me that eating this

way is truly taking care of my body, just like it feels.

Hope my story helps reassure you!

Blessings,

Sharon

Thanks for the feedback

It feels strange but nice to be part of an online community. A new experience

for me! I

know you all have so much experience doing this and I really value your

opinions.

Hmm I am in a bit of a bind because I understand why I should be taking it slow,

over the

past week I have spent hours on the website and reading through everything

possible, I

have also ordered the books again. The problem is I am really scared about

re-introducing

sugar back into my diet because I hate the cravings and the feeling of not being

able to

control it. At this point I don't feel like eating anything sweet which feels

great and though

I am down today I am hoping my moods will level out. I did have manuka honey on

rye

bread with hot coco and soy milk for a snack in the afternoon today and it

didn't trigger

sugar cravings so maybe that is a way of keeping sugar in my diet until I get

everything

stabilised.

I am also making sure I have flaxseed oil every day and a piece of salmon every

week for

Omega 3's and the other vitamins and minerals recommended. Hopefully this will

also

help with levelling me out. At the moment breakfast for me generally consists of

2 eggs

and homous on wholemeal toast or a good meusli with soy milk and protein powder.

I love

making smoothies but my blender is broken so that is on my shopping list. I find

that eggs

are definitely the thing that holds me for the longest in the morning but I

worry about

eating 2 eggs a day, it doesn't seem very balanced or healthy. Does anyone have

an

opinion on this?

Anyway I have been having fun in the kitchen trying new spices and ways of

cooking

different beans, tofu and veges. I also bought some Quinoa which I will have a

go with in

the next day or two. Have any of you tried cooking with it before?

Lisar
