Hi Linda,

I am new to this group as well. I am not new to being a vegetarian

though. I have been eating mostly a whole foods, natural vegan diet

for over ten years. I've learned a lot and am thinking of writing a

cookbook so I'd be happy to help. What kinds of foods do you like or

do you not like?

Linda, go to the site on , click on files, click on recipes. You will

have at the tip of your finger all the recipes you need to keep everyone

Hi everyone. My name is Linda and I am new here. Thanks, Donna, for

the invite. I am in transition and am trying to learn as much as I

can about vegetarian foods. I decided about half a year or so ago it

would be better for my health, my doctor agreed, (he's vegetarian

anyway) and I am really finding I like a lot of the recipes. The hard

part is putting together meals that are delicious and filling for

myself and the two guys that live here. Any suggestions are always

Hi Kim. Are you really a doctor? I have a hard time trying to decide

what foods to put together for a complete meal. I have my husband who

is not vegetarian but will eat anything I give him as long as it's

filling, cause he's a big guy with a huge appetite. Then we have an

elderly gentleman living with us also, and he eats whatever I give

him. Also, I would like a recipe for Eggplant Parmesan. I never ate a

lot of veggies like squash, eggplant, zucchini and that stuff, but now

that I have tried squash and zucchini, I like them. I'm trying to be

brave enough to work up to eggplant too.

true. not just copied and pasted.

I have no kids yet so I must just not understand, but why can't you

simply take all of the " dead " food out of the house and MAKE your kids

eat the healthy stuff? My reasoning is: A kid (or husband) isn't a

complete idiot - eventually they will eat the broccoli or salad or

fruit or whatever once they get hungry enough. They'll complain and

whine and cry at first, but soon enough instinct will take hold and

they will eat those fruits and veggies. Thats what I do to myself!

Just don't have the dead food in the house and it won't get eaten!

Welcome Monica!

 

My advice to anyone, even non-veg folks, is to eat a diet full of whole grains

and eat a rainbow of fruits and veggies every day.

 

We love the Morningstar nuggies (though I don't thing that they are vegan); I

cut them and put them on salads.

Welcome Monica,

 

 

 

My favorite cookbook is: 7 Secrets by Jim and Neva Brackett. They used to

operate a health food restaurant in Seattle a number of years ago. This is

their 2nd cookbook and is even better than their first. It is totally vegan,

(although we aren't)and the food in it is very tasty. I have not used a

recipe in it that I have been disappointed in, (although there was one that

my kids were not that keen on. )

Welcome. My favorite chicken-free nuggets by far are the Health is

Wealth brand. They come in chicken-free nuggets or chicken-free

patties. Vegan and really good.

health is wealth makes really good vegan chick nuggets. they also have patties

and a buffalo spicy style nugget that are all vegan and yummy. i find them in

our local hfs.

Welcome Sue!  I recognize your name, but ofr the life of me cant remember why! 

Either from freecycle or another vegetarian or St Louis site/group! LOL.  I live

in Wentzville, and have been working on being veg for past couple of years. 

Still not succeeding, but working on it.  Oh and I LOVE Pad Thai, thanks for the

Hi, I'm a new member. I'm not vegetarian but I have a daughter who is a

lacto-ovo vegetarian who refuses to eat meat substitutes, and another lactose

intolerant daughter. My husband and much of his family is diabetic. The

omnivorous members of the family end up eating a lot of low-fat, low-sugar

vegetarian meals, so I'm always looking for new ideas.

 

One of our favorite dishes is pad thai, which can vary a bit depending on what

kind of tofu is available. We live in St. Louis, where Jay International often

carries fivespice baked tofu and chili-lemongrass tofu. These can be cubed and

added to the noodles along with the beansprouts at the end of cooking. Trying to

explain pad thai is difficult--I tend to just start cooking by slicing an onion

and going from there!--but basically you soak the XL bean thread noodles (about

7 ounces to serve 4) in hot water while you saute the onion and maybe some

vegetables (sugar snap peas, slivered carrot, maybe chopped bok choi) in a

little cooking oil. When the noodles are soft, about 15 minutes, you add them, 2

tablespoons catsup, some vegetarian fish sauce, and a dash of soy sauce. Toss

everything together and push the noodle vegetable mass to one side. Scramble two

eggs in the little area on the side of the skillet, and then toss the cooked

eggs with the

noodles. Add the tofu and at least a handful or two of fresh bean sprouts. Toss

again and heat the tofu through. Serve with lemon juice, chili, and peanuts

(whole or ground into powder) to sprinkle on. Fair warning: you need a wok or a

really big skillet if you are doing the 14 ounces of noodles that come in a

package of bean thread noodles.

Welcome Knitting Nan, I feel your pain, I'm the only vegetarian in my household,

it's hard since I still have to cook meat for the rest of the family, and still

make something nutritious and non meat for me.

hi,

 

 I am new and also fairly new to being a veggie. I am the only one in my family

but my husband eats very little meat.

 

 I do it as I love animals a lot. I live surrounded by sheep ,lambs and cattle

so why would I want to eat them.

 

 I am 59(ouch) but in 2007 I started being ill with loads of vertigoes and the

dr sent me for blood tests and I was found to have type 2 diabetes. My father

had it in his 60's. I have lost weight but am finding it hard to maintain,thats

why I have joined.

 

 I live in NW of England, in a village..well on the side of a hill actually.

 

 I have 3 grown up family and 2 grandchildren 7 and 5. We have 2 rescued dogs

and 2 elderly cats and another cat has been here tonight. We have fed it and it

has an outbuilding to sleep in. My husband does a lot for the local shelter so

he will try and get it a new home if no-one claims it. My youngest Molly doesn't

like cats(they told us she had lived with 4 cats but I am not sure) Also my

cousin left her budgie and now she don't want it back. So there you are...now I

   This is a very diverse group of people, but the recipes are wonderful and the

exchange of information is what makes it, I think, one of the best groups on

!  I have learned so much from the members here--and have tried so many new

foods because of all the great recipes!  Welcome!

Hi Jo,

 

Thanks for the warm welcome.

 

At the moment I'm reading everything I pick up from the shops to see what's in

it. I usually feel safe though with the Aldi stuff that does actually mention

that it 'safe' for veggie's or vegans.

 

At the moment I buy alot of Fry's products which I find really nice. Otherwise

dinner usually consist of a large plate of veggies, tofu, eggplant and soy

sauce. I have tried a few of the other brands but found them to be a bit too

bland. I've just come back from the UK where Linda Macartney has/had her own

line of different products. The sausages were delightful and even my non-vegan

hubby liked them.
