Crazy Cake-no eggs, no milk, no butter but delicious!

Crazy Cake

 

3 cups unbleached white flour

2 cups of sugar

1 tsp. salt

2 tsp. baking soda

1/2 cup unsweetened cocoa ( you can leave this out and it will still turn out

ok)

3/4 cup canola oil

2 Tbsp. white vinegar (I have used apple cider vinegar with fine results too)

2 tsp. vanilla extract

2 cups cold water (add just a tiny bit less water if you are leaving out the

cocoa)

 

Sift flour, sugar, salt, soda, and cocoa (if used) into a 9 x 13 inch, ungreased

cake

pan. Make three wells. Pour oil into one, vinegar into another and vanilla

into the

last one. Pour cold water over it all and stir very well with a fork.

 

Bake at 350 degrees F. for 30 to 40 minutes or until toothpick inserted comes

out

clean. This cake is best if left in the pan and then frosted but you can also

bake it

in a bundt pan. I can't remember the exact time but around 50 to 55 minutes, I

think.

If you want to make it a spice cake just add 2 tsps. cinnamon, 1/4 tsp. nutmet

and 1/4

tsp. ground cloves and add some raisins.

 

The year I made it as a birthday cake for my friend's daughter, I cut the cake

up and reassembled

it in the shape of a Raggedy Ann doll, then iced and decorated it. I still

have the picture....all

these years later.

Is there a recipe we can use to make a birthday

cake for her using no milk or rice milk? I looked in the files but

there doesn't seem to be a plain white cake; I thought if I found one

using soy milk we could just substitute the rice milk. I am a fairly

new vegetarian and I don't have many vegetarian cookbooks yet but

could get one from the library if someone has a suggestion. Thanks
