Quinoa and Garbanzo Bean Salad

 

 

Hi, I'm new here and looking for some new ideas! This is one of my

favorite side dishes.

Quinoa and Garbanzo Bean Salad

Makes: 4 servings

Prep time: 10 minutes

Cook time: 30 minutes

Ingredients Measurements

Quinoa grain ¾ cup

Water for preparing quinoa grain 1½ cup

Chickpeas, canned ¾ cup

Onion ½ cup

Green onions or scallions 3 scallions, ¼ cup

Poblano pepper ½ cup (I used zucchini instead)

 

For the Dressing

Lemon juice 2 Tbsp

Oil olive 2 Tbsp (I like extra virgin)

Cider vinegar 2 tsp

Chili powder ½ tsp (I omitted this)

Oregano, fresh ½ tsp (I used dill instead)

Parsley, fresh 1 tsp.

Sea salt ½ tsp.

 

Method

Bring water to a boil. Add quinoa and stir. Turn down heat to low.

Cover. Simmer covered 25–30 minutes, until all water is absorbed and

quinoa is tender. Cool cooked quinoa.

Dice the onions and poblano. Slice the green onions. Drain canned

chick peas and rinse.

In a small amount of the oil olive, sauté onion and pepper (zucchini)

over medium heat for 2–5 minutes or until onion is slightly soft.

In a large bowl, mix thoroughly onion-pepper mixture, green onions,

cooked quinoa, and chick peas.

Dressing: In a small bowl, add lemon juice, cider vinegar, chili

powder, oregano, parsley, and salt. Slow whisk in olive oil. Pour

dressing over quinoa-chickpea mixture. Gently mix until dressing

thoroughly covers all the salad.

Hi,

i also can share a recipe for a bean salad. It's called Bean Salad Cup of Chickpeas. I've done it, approved!:)

Ingredients

 

 

 

  • Cup of Black Beans
  • Cup of Haricot Beans
  • Cup of Pimento Beans
  • Handful of chopped coriander
  • Handful of chopped mint
  • One finely diced Red Pepper
  • Half Finely diced Red Onion

 

 

  • For the dressing:
  • Small pot of natural Yogurt
  • 4 Tabspn Olive oil Juice and Rind of one Lemon
