Roast Vegetable Tostadas

 

 

Seed mix contains sunflower and pumpkin seeds. You can use either sunflower or

pumpkin seeds.

 

 

cooking oil spray

4 mini GF tortillas

450 g (16 oz) sweet potato, cut into 1.5 cm (5/8 " ) pieces

1 medium red onion, cut into wedges

4 teasponns vegetable oil

4 teaspoons GF taco seasoning mix

8 teaspoons seed mix, toasted

8 teaspoons chopped fresh coriander (cilantro)

1/3 cup mild chunky salsa

1/2 cup grated vegan tasty cheese

 

plain soy yogurt and chopped avocado, to serve

 

 

1. Preheat oven to 180 C (350 F) fan forced.

 

2. Spray four 9 cm (3 1/2 " ) (base measurement) pie tins with oil; place on a

baking tray.

 

3. Heat tortillas in a microwave on High (100%) for 15 seconds. Line prepared

tins with tortillas. Bake for 8 to 10 minutes or until lightly coloured.

 

3. Increase oven temperature to 220 C (430 F).

 

4. Line a baking tray with non-stick baking paper (parchment). Place sweet

potato and onion on prepared tray. Sprinkle vegetables with oil and seasoning

mix; toss to combine.

 

5. Bake for 20 to 25 minutes or until tender.

 

6. Combine veggies with seed mix and coriander (cilantro). Spoon into tortilla

shells.

 

7. Preheat an oven-grill (broiler) to high. Spoon salsa over vegetables and top

with cheese. Grill for 3 to 4 minutes or until cheese melts or, depending on

your cheese, heats through.

 

8. Top with yogurt and avocado. Serve at once.

 

 

Serves 4.
