Guest guest Report post Posted May 11, 2010 Sweet Potato Saute 2 tsp vegetable oil 1 small brown (yellow) onion, thinly sliced 2 cloves garlic, crushed 700 g (1 1/2 lb) orange sweet potato, cut into 2 cm (3/4 " ) pieces 3/4 cup water 120 g (4 1/4 oz) baby spinach 8 tsp slivered almonds, toasted 5 tsp hoisin sauce 3 tsp clear honey -OR- agave nectar 3 tsp GF soy sauce 3 tsp water 1. Heat the oil in a medium frying pan. Add onion and garlic and cook for 5 minutes or until onion softens. 2. Add sweet potato and 3/4 cup of water. Cook, partially covered, stirring occasionally, for 10 to 12 minutes or until tender and water has evaporated. 3. Meanwhile whisk together hoisin sauce, honey or agave nectar, soy sauce and water. 4. Uncover sweet potato and add spinach and sauce mixture. Bring to the boil, then reduce heat and simmer, stirring for 1 to 2 minutes or until spinach has wilted. 5.
