Welcome, you've come to the right place for recipes !!!

 

If you go the " Files " section - the link is on the left hand side of the Vegan

and Gluten Free

group's home page or click this link

 

 

- then click on " ***Recipes Posted to VGF*** " , you'll find a long list of

category folders

which contain hundreds, if not housands, of recipes, all of which are vegan and

gluten-

Those are great files. Thanks! On the safe list distilled vinegar is listed. I

thought distilled vinegar has gluten since they use grains for the distilling

process???

Although some vinegar is distilled from gluten containing grains, it is

considered to be

gluten-free as no gluten is detected after distillation. That said, many of us

still prefer avoid

vinegar made from grains. After all, it is a very easy ingredient to substitute.

I use mostly

apple cider vinegar, but also some wine vinegars and rice wine vinegar.

Helllo!

 

We are new here too. My husband and at least 2 of our boys are

celiac. NO gluten at all. We are artificial dye free and organic,

we try to avoid preservatives as well. My boys LOVE fruits and

veggies.... me however....LOVE very bad for you donuts. I sneak one

every few months. :o

 

There is a for parents with gluten free kids if you are

interested. Most are casien free and many are dairy free as well.

 

Anyway, I am a homeschooling mommy of three wonderful boys ages 8, 5

and 1. We live in Tennessee right now, we just moved here from

Atlanta GA but are orginally from Illinois.

 

I can't wait to get to know everyone here. This seems like a great

group so far.

Hi Danielle!

 

Allergies are pretty much the guiding factor of my life, but

recently I have found a couple of cookbooks that are pretty helpful:

 

the allergy self help cookbook by majorie jones and

cooking free by carol fenster.

 

the first thing i made from carol fenster's book was banana bread -

and it was the first time i ever baked in my lfe, but it turned out

perfect.

 

she is sensitive to many allergies and offers solutions for

replacing almost anything you can think of.

Hi, Michelle,

I am a fairly new (not quite) vegetarian myself. Also, because of health

reasons, but also because I can't face the cows in the pasture in the

morning. 8-)

I am sure you will find loads of recipes that are simple to make. I have

found several good ones.

Usually, when I join a group I lurk for a bit before jumping in, but

the welcoming email requested that I go ahead and introduce myself, so

here I am. I wish I had a great recipe to share, but I don't, which is

why I'm here.

 

I switched to a vegetarian diet earlier this year, because of health

problems. And I am thoroughly sick of my own cooking and looking for

new, useable recipes. A lot of the veg cookbooks I look at have

complicated recipes full of ingredients I don't know and wouldn't know

what to do with. I'm interested in simple recipes with ingredients I

can find. New ingredients are great, if I can get some guidance on how

to use them.

Check out the files there are so many recipes to try. I have so many recipes I

want to try that I could take a year off of work cook every day and probably not

get thru them all.

Hello...quite a jump from Pa. to california. I am in Pa, been here for 25 years,

grew up in Maryland. I have 1 more youngin at home and when she is grown I am

looking to move. Never thought about California tho.

Welcome Pam,

I agree , you sure do have 'waaaaaaaay too much living to do' and

lots more fun too...My daughter has three of those sweet Chihuahuas

so I am familiar with those little ones. You are in for some real

surprises when you try some of the recipes in the files. Then as you

choose the Vegetarian lifestyle you will see some changes in your

energy level. You might not get rid of all those aches and pains but

you will find yourself to be a much healthier , more peaceful person.

I'm 66 plus and a Vegetarian for almost 30 years and in my opinion

the Vegetarian/Vegan lifestyle is one of the most important gifts we

can give ourselves.

Many of us know exactly what you are going through. The first couple weeks.

learning to cook meals and having your body get used to the change is hardest.

After that is a lot easier. You will love the recipe section. All our recipies

are TNT; Tried N True, so you know they are good. Having such a wonderful

selection of vegetarian delights will make cooking and meal planning a whole lot

easier.

You can also come here for encouragement and advise.

Ola,

I've been a Vegetarian for over 25 years and I only wish it had been my

lifestyle for many years before that. I not only do not find it

difficult I find it easier to be Vegetarian. There is no limit to the

wonderful foods that I can eat. The transition can be so easy if you

just adapt your *favorite*recipes and eliminate the one ingredient

meat. Don't think of it as a diet. It is a chosen lifestyle. Your body

and mind will feel different. You will feel 'healthy' and clean.

Hi Deanna. Thanks for the response. My biggest problem is learning

how to cook all over again. Katie was nice enough to mention the

groups recipe file, so hopefully that will come in handy.

Ola,

 

You have joined a great group, welcome! How difficult you find the

transition depends on what type of diet you had originally, what part

of the world you live in, and also, very importantly, how much support

you get from your family and your friends.

 

I mean, if you eat your standard Midwestern fare, grew up on a beef

farm, and live in Iowa (for example, not picking on anyone) you will

have a much harder time than if you live in California, and you were

already eating a lot of vegetables, fruits, grains and legumes but

still had some meat from time to time.

 

In some parts of the country (and the world) very well meaning friends

and family would maybe not know what to feed you. This is where

joining groups like this can be very helpful, you can always ask

questions on how people handle the various situations that arise.

 

I first became vegetarian when I lived in Ohio and it was not

easy....I still have a hard time finding things to eat now a days when

I visit. So yes it can be hard, but do not get discouraged, finding

tasty things to eat is the easy part.

Hi Terri,

I'm Chrissy, also a newbie. At 16, I gave up eating ground beef and pork, after

seeing my grandmother suffer from a stroke. Her diet was quite strict, and I

followed it along with her, since I was taking care of her (though, she did not

suffer from anything other than slight memory loss, I had to drive her around

for a few months), soon after, I switched from fried foods, to grilled or

broiled. Also gave up salt and soda.

She raised me to be a big veggie eater, and believe me, there isn't one that I

do not like, but she raised me on fresh, home grown veggies from the farmer's

market, or we would eat unsalted, unseasoned frozen veggies. Canned items were

not allowed in her house.

Ever since 16, it had been chicken or seafood. But even eating that, worn my

body down, and made feel as if I were " dragging " , if you will. Since switching

to strictly vegetarian, I have more stamina, I feel lighter.

Now, at 28, my way of changing was due to that " dragging " feeling, but also,

eating dairy or bread items, gave off the same effects, just now, I'm having to

adopt a more vegan approach to foods. So, I'm looking for great alternatives to

cheese. The milk based anything, has been switched out to soymilk based

everything.

 

I joined this group to meet others who follow the same, or close to the same

lifestyle. To have the same support system, and to find great recipes.

thats how I felt when I ate meat, I felt like I was a log and didnt have

energy for anything. I couldn't keep up with my kids, I have been off meat for a

little while and I am getting more energy and not so tired during the day. I

have been working more in my yard and my mom would go by and say your doing a

good job or yesterday she told me that I am getting a good tan because I am

outside all the time. I have alot more energy and it's great. I can't wait

till I get peaches from my tree and get my garden going next year.

My husband is a big meat eater which is something I'm not very fond of but we deal with it.. it's difficult sometimes to make meals together as everything has to be separate. Sometimes I find it completely exhausting to be a

vegetarian when it seems like the rest of the world isn't, so I'm glad to be a part of this group.Krysten

Welcome to Vegan Chat - I hope you enjoy it here.

 

If you are to be a vegan (if you've made that decision) then you will

no longer eat cheese or have milk chocolate or normal ice cream. I

hope you don't find it too difficult as it a worthwhile thing to do -

good for your health (dairy is worse for your health than meat!),

good for the animals, and good for Earth.

 

I think I would find it impossible to be vegan if I didn't cook, but

then I guess it would also be difficult to be anything not cooking!

Cooking doesn't need to be difficult or a long process, so if you

need any advice I'm sure people here will be willing to help.

 

Personally speaking, I think I am a very picky eater. I like my food

to be healthy and tasty, and the only way I can get that is to cook

it myself (the same would apply if I was a meat eater). That doesn't

mean I don't have treats, as I do - vegan ice cream, chocolate and

sometimes other sweets. Puddings and cakes are very easy to make if

you like to eat them.

 

Some people miss cheese for quite a while, but eventually get used to

not having it. We have found that the Vegan Parmesano powder is good

to shake over something like vegetable pasta bake or leek pancakes in

white sauce to make them cheesy.

Hi Krysten,

And welcome.

On the ice cream front there are vegan ice creams out there, and depending on where you live, I am sure we could recommend one to you. As for your chocolate bars, well there are some vegan chocolates out there also.

As for vegan "cheese", well I dont eat them myself , as I never used to eat cheese before I turned vegie/vegan.

Let us know what part of the world yu live in, and we will try and advise on altenatives.
