It is usually in the produce section, where they also have some of the veggie products. It is by a company called Lightlife. It can also be purchased at a healthfood store. Guest guest Posted January 14, 2005 Report Share Posted January 14, 2005 Cristene, I don't follow too much of written recipes, but, what I do with chickpeas is throw them in a white sauce (seasoned well and nutritional yeast added) and ladle over noodles or rice. Sometimes, I buy an Indian type of sauce, throw the chickpeas in and once again, ladle over pasta or rice. Then with portobellos, I marinate them in some olive oil, a several tablespoonful of soy sauce and let marinate. Make sure the portobello is completely covered. Let it marinate an hour or more, and then cook! You can also use, bottled Italian salad dressing in place of your own marinade. They always come out wonderful for me. Sorry. That doesn't mean it wasn't posted - it just means I don't have it. I did find the following recipe from Joanne Stepaniak's Vegan Vittles with sage in it that was posted. I've tried it and love it. I also found a great recipe for a Chickpea Salad I'm sending your way. It's pretty yummy too. As far as Portobello mushrooms go - since I really don't like ANY kind of mushrooms I can't help you there. God's Peace, Gayle EASY GARBANZO-OAT BURGERS Recipe from " Vegan Vittles " by Joanne Stepaniak 2 teaspoons canola oil (or vegetable oil) 1-1/2 cups chopped onion 2 cups quick cooking rolled oats 1/2 cup ground walnuts 1 cup cooked or canned garbanzo beans, rinsed well and drained 3/4 cup nondairy milk (soy milk, rice milk, etc.) 3/4 teaspoon salt 1/2 teaspoon garlic granules 1/2 teaspoon onion granules 1/4 teaspoon celery seed 1/4 teaspoon dried sage Sauté onion in oil over medium high heat until tender and browned, about 10-15 minutes. Place the oats and walnuts in a large mixing bowl. Toss them together and set aside. Place the remaining ingredients in a blender, and process until very smooth and creamy. Pour the blended ingredients into the rolled oats and walnuts. Add the cooked onions and mix well. The mixture will be fairly stiff. Allow the mixture to rest for 5 minutes so the oats can absorb the liquid. Form the mixture into 8 thin, flat patties, using about a cup per patty. Place the burgers on a sheet of waxed paper as soon as they are formed. Coat a large skillet with a thin layer of oil and heat over medium. When the oil is hot, brown the burgers slowly, about 5-7 minutes on each side, turning them once. Chickpea Salad With Cumin & Garlic Ingredients: 16 ounces chickpeas (or black beans), rinsed 2 fresh tomatoes, chopped 1 red onion, very thinly sliced and halved 1 sweet red pepper, diced 1/2 cup olive oil 1/4 cup red wine vinegar 2-3 garlic cloves, crushed 1/2 teaspoon cayenne pepper 1 tsp. cumin or more to taste 1/4 cup freshly minced parsley Mix all ingredients and serve chilled. Serves: 4-6 Notes: Top fresh greens with a 1/2 cup or so on a salad plate. You can also use green onion and green bell pepper instead of the red onion and red bell pepper, and add olives if you wish. I make it with home canned tomatoes, tofu to replace the ricotta, follow your heart vegan mozarella and maybe Yves meatless ground in the sauce. You can also add spinach or zucchini or any other veggie. I like to use the no cook noodles but you could use regular or even shole wheat. I'm just always on the search for recipes that are vegan, gluten free, sound good, and use whole foods as much as possible. I love to post recipes, and when I find something that 'works' for our group, I try to post it on VGF so that it's 'saved' in a safe place until I have time to try it. List helper, Kim, does a fantastic job of filing all the recipes in our 'files' section. Then, when it's time to prepare a meal. . .the recipes are easily accessible and ready to use. Many times you'll find me preparing meals with my laptop on the counter; VGF files on the screen. I love trying out new recipes and do it frequently. Right now I'm posting recipes from a magazine called Creation Illustrated. I found many back issues in my mom's collection and each issue has an article on plant based foods and recipes. Guest guest Posted July 13, 2006 Report Share Posted July 13, 2006 Hi Tara My favourite simple recipe is Lentil Hotpot:- Put 2 oz red lentils into a saucepan with chopped vegetables (1 onion, 1 carrot, 1 celery stick, 1 potato). Add ½ pint or so of stock and a pinch of chilli powder and black pepper. Stir and bring to the boil. Simmer for 20 minutes. Add a little chopped parsley and serve. I serve with mashed potatoes - mainly because I love mashed potatoes. Also you can include other vegetables, and sweet potato substitutes nicely for potato. In the UK Redwoods Cheezly is the best vegan cheese and they also do a melting Cheezly. Redwoods and Frys are the vegan ready made foods I buy, but I don't eat them often as they are high in salt. Lettuce and complex carbohydrates (oats in particular) are said to be good for keeping you calm.
