How much pumpkin do you use?

darranged wrote: The pumpkin pie is from Vegetarian Times

many, many years ago. Pour

the following into a crust of your choosing (I like ginger snaps

smashed into a cookie crust)

In the food processor, blend:

soft tofu (I use firm)

half a container better than cream cheese (can substitute with the real thing)

1 cup sugar (I use less)

1 teaspoon vanilla

1 teaspoon cinnamon

and I believe it's a quarter teaspoon of each of the following (I

just toss in, I don't measure)

nutmeg

ground cloves

all spice

Bake at 350 for 45 minutes, then leave in hot oven for an hour

beforeopening door. Refrigerate at least four hours before serving.

The bread is a wheat recipe from my bread machine book that I threw

an herb packet into (pre-made that someone gave me for christmas) I

thought it would add pizzazz to my stuffing

The sweet potato crunch I've never made before, but it's buttery

sweet potatos with walnuts. That and the corn bake I'd have to go get

the recipes.

Thank you! That sounds so yummy. This will be my first holiday as a

vegan and I looooved custard. My husband just realized we'll have to

skip the cheese balls this year. And butter tarts. So many animal

products are part of our holidays, even though it's been many, many

years since we've eaten the meat. I'm wondering how shortbread will

taste with vegan butter.

What do you mix with your ginger snaps to make the crust?

That's very considerate of you. Make them a loaf from the files or you

could get a frozen Quorn roast and make it with a homemade gravy from

the sauce recipe folder.

Tammy,

Make your favorite sage stuffing(with veggie broth). A dish of

carameled baked sweet potatoes , pumpkin pie, mashed potatoes and gravy

and stuffed celery and stuffed mushrooms. Lots of fresh veggies and

dip. I also make deviled eggs for the children. These recipes are in

our files and you can always adapt them to your taste. Mercy ! I'm

making myself hungry...LOL

I dont know where I found this link but I am planning on trying this recipe this

holiday season. There is a video showing you how to do it and the recipe is

below the video box, just scroll down. This is for tofu turkey. Im not sure if

there is a recipe for this in the files already. I dont have time at the moment

to look, so here is the link.

HI:

My daughter and I like the tofurkey however we do not like the stuffing. We

usually take out the stuffing and stuff it with something else. We like it

better then the quorn roast. I think for us the quorn roast might be to

close to the real thing.

Hahahaha. I know it's funny how our tastes are so different. That roast wasn't

a hit when I served it a few years ago. I actually love the loaves in our files

and usually make one of those two. The Quorn goes so fast it's nice to have a

loaf for the next day with all the leftovers.

This is my first Thanksgiving as a vegetarian also. I'm going to try

making my own tofurkey. There are some good videos on about.com , just

search for " make your own tofurkey " .

Anyone have any suggestions? What to, or not to do???

Thanks!

I just got home from the grocery store where I saw a Tofurkey at the Stop &

Shop, that was a surprise.

Since we go out for Thanksgiving we will buy it on Friday and make it.

Steph, what do you put on or serve with your Quorn roast? I've got one but

haven't done anything with it yet. I love the Quorn chik'n, so I'm sure I " ll

like the roast.

We go a different route as we have no family nearby.

We go to our neighborhood Free dinner. The culinary arts school at our local

community college caters the event. They include much yummy veggie food. More

delicious than what I have ever made. Also, a world famous jazz musician (Paul

Biondi) always shows up with his band to the delight of us all. There are

crafts and activities for the kids and we are spending time with homeless and

hungry people. Some years I have made it down to volunteer but apparently they

have TO much help available.

Anyway, my son does find ways to serve during the clean up faze so it's a

win-win for us.

This year the local college (U of O) is recruiting families to host an

international student. I offered to pick some up and take them to the free

dinner. While I know it is a blessing to relax in a home atmosphere, this is

definitely a viable alternative for them to experience a different side of the

US.

Sincerely,

Isa Aviad
