Hearty Winter Roots Soup

This has been a favorite the past few years. If asked, before I tried this

soup, I assumed I didn't like rutabagas. Now I look for recipes using them, and

it snowed last night so this soup seems appropriate.

Hearty Winter Roots Soup

2 tablespoons canola oil

1 large onion -- chopped

2 cups peeled, diced rutabaga

2 medium carrots -- peeled and coarsely chopped

2 medium potatoes -- scrubbed and diced

2 medium parsnips -- diced

1 large celery stalk -- diced

1/3 cup rolled oats, rolled wheat, or rolled rye

1/4 cup dry white wine

2 teaspoons salt-free herb-and-spice seasoning mix

1 1/2 cups grated reduced-fat cheddar cheese or

cheddar-style soy cheese

salt and freshly ground pepper to taste

 

Heat the oil in a soup pot. Add the onion and saute over medium heat until

golden. Add the vegetables along with just enough water to cover. Add all the

remaining ingredients except the last 3 and stir together well. Bring to a

simmer, then simmer gently, covered, until the vegetables are tender, about 30

to 40 minutes.

With a slotted spoon, remove about 2 cups of the vegetables and mash coarsely,

then stir back into soup. Addd the milk or soy milk and allow the soup to

simmer over very low heat for another 10 minutes.

Sprinkle in the cheese, a little at a time, stirring it in until fairly well

melted each time (soy cheese may not melt as completely). If the soup is too

thick, adjust the consistency with a bit more milk or soy milk, then season to

taste with salt and pepper. If time allows, let the soup stand for an hour or

so before serving, then heat through slowly, over low heat, as needed.

The soup directions say to add the soy milk, however, there's no soy milk in the listing of the ingredients. I would like to make this tomorrow - can you give me the amount of soy milk used, please? Look forward to hearing from you!
