Wot's Fer Dinner?

I'm stuck for ideas, today. What's for dinner at your house???? I'm looking for

something that won't heat the house up too much and will satisfy my love for

something spicy!!!

Yesterday i made some Cuban black bean

soup in my crockpot. i only use one jalapeno

as the recipe suggested and my dh said he

felt the spice level was perfect, but i was of the

opinion it could have stood to have more.

i like to use the crockpot to make soups during

the summer when it is too hot to oven/stove cook;

it makes dinner easy and we can all just dip in

and eat when we feel hungry. A crusty loaf of bread

and a salad of fresh fruits or veggies rounds out the

meal perfectly.

Tonite everything comes out of a can/jar/package. I'm making enchiladas, filled

with vegetarian refried beans, chopped green chiles, salsa and a mexican blend

of cheeses. Wrap it all up in flour or corn tortillas and smother in a can of

enchilada sauce (haven't found the new mexico chile powder yet to make the

recipe I got from this list awhile ago). I'll sprinkle them with a little more

of the pre-shredded cheese and throw in a 350F oven for about 15 minutes.

 

It's fast, yummy and wno't heat up the house.

Well you could have what I am having for dinner tonight, or should I

say what I am making for my family... Hummus with pita bread and a

caesar salad. Lots of garlic and lemon in both. I have a great

recipe if you want. I make the caesar salad a bit differenly than

most, I take a huge bowl of organic field greens, sprinkle some

olive oil on it. Then I crush about 5 cloves of garlic, sprinkle

with lemon juice and sprinkle with some parmesan cheese. My kids

love it. Hummus goes great with it, although I make this for my

family it is not raw, They do not eat raw food, I make my hummmus

with sprouted chick peas, and I take my salad out before I sprinkle

on the parmesan cheese. It still tastes good to me. Here in LAs

Vegas it is about 100 to 110 degrees so you really don't want to

heat up the house!!!

Well, the temps here were nowhere like yours (thank dog) but we still didn't

cook last evening. We ended up much like you, with some differences. We

had a big salad of baby spinach, green pepper/capsicum, halved cherry

tomatoes, a few onion slices/rings, garlic, and a handful of walnuts - in a

white

wine vinegar and olive oil vinaigrette - with, yep, you guessed it, hummus on

wholewheat.

 

Now about those rawfood recipes, Mark . . . . . ;=)

This is a really *good* idea - and I know your Cuban black bean soup recipe

from, er, *your* list ;=) Everybody who doesn't know, *the* list for things
