Kefir in water is not a problem. It may even ferment a bit depending upon

the food that was left on the grains.You can use water and other sugars,

like fruits like grapes or apples and does well in cocconut water as well.

The grains themselves may not grow larger, but they will ferment.

Though they are not the same milk kefir grains may be used veryu much like

water-crystals.

Hi, I just found my milk kefir grains on the counter in my dark little

bottle I store them in between batches. I had left them in water, but

forgot to put them in the fridge. It hasn't been particularly hot here,

but I don't want to waste a batch of milk finding out what will

happen. Does anyone have any experience with this? i think they were

out for 4-5 days, not sure. Thanks for any input! Kate
