Sausage Red Potato and Sauerkraut Stew

4 tablespoon butter or marg

1 large onion, thinly sliced

1 pound sauerkraut, drained

1/2 cup dry white wine

1 cup veg stock

2 tablespoon wine vinegar

2 tablespoon brown sugar

1 bay leaf

salt and pepper, to taste

1 pound new red potatoes, cubed

1 pound vegetarian sausage, sliced into rounds

3 tablespoon Dijon mustard

 

Melt butter and sauté onion until golden brown. Add sauerkraut, wine, stock,

vinegar, brown sugar, bay leaf, salt and pepper. Bring to a boil and then simmer

about 20 minutes. Add potatoes and sausage rounds. Stir in mustard and simmer

until potatoes are tender, about 30 minutes. Serves 4.

This sounds wonderful! What kind of sausage do you use? I think Boca's brats

would be good.

I love the Yves brats and the Tofurky Italian sausage.  Sounds like a great

recipe.  POTATOES!
