Cookbook Review

My latest find from my library consortium is the book " Feeding the Healthy

Vegetarian Family " by Ken Haedrich (there was an article in last week's

" American Profile " that is part of our local town paper (it's a nationwide

publication, I'm sure others have seen it) about some of his soup recipes).

There are a few in this book I'd like to try - Curried Yellow Split Pea and

Winter Squash soup; Winter Squash, Bean and Pasta soup; Braised Kale, Winter

Squash (using Delicata! someone posted looking for ideas not long ago) and

corn; Barley, Mushroom and Spinach tian; and Tempeh, Onion and Cheese Enchiladas

are the ones that initially caught my eye.

 

Has anyone else used this cookbook before?

Barley, mushroom and spinach what? I love mushrooms and spinach!

Can you believ e I don't have that cookbook?

Barley is wonderful. I toss it into my split pea soup.

Hard to believe, oh queen of the cookbooks!

(I just made an Italian vegetable style soup with barley.)

 

I also picked up a copy of a Taste of Home magazine of all soup recipes, several

veg or easily adapted....still going through it!
