I wouldn't be one today if I didn't have this group and a few outside

vegetarians to guide me along the right path.

I'm grateful I wasn't judged.

I haven't gone totally vegetarian, my granddaughter seems to think it wouldn't

be hard for me.

For now, I want to get more vegetables into my life, I actually like alot of

them.

I certainly hope I don't become too aggressive. lol

Carl and I just kind of slipped into being vegetarians. The night we " became "

vegetarians (close to 25 years now), Carl looked at his plate and said, " You

know, you haven't made anything with meat in a long time. " So the next night I

made something with meat. We both took some on our plates, pushed it around a

little and ended up giving it to the animals.

When our grandson lived here, I made meat for him. Good grief, that stuff is

expensive! If we weren't already vegetarian, we'd be going that way just because

of economics.

The only things I miss are bacon and sausage, but not so much that I want to buy

it and cook it. Go figure. He misses fried chicken, which he couldn't have

anyway because of his heart surgery.

I am gonna share a quick recipe that i borrowed from well myself

really

veggie/tofu sautee:

1/2 red onion chopped

1/2 yellow squash cubed.

1/2 pckge firm tofu cubed...

1/4lb fresh spinach..

sweat the onions, then add a pinch of pepper(i prefer lemon pepper) & a

dash of salt..

once the onion is slightly sweated, add in the yellow squash &

tofu..turn up the heat to a medium simmer..

u can add other veggies as well, i like to put a small handful of

sunflower seeds in there to make it crunchier..

sautee till the tofu is golden around the edges..serve over pasta or

rice..and season as u see fit.

It's really simple to throw together, I even(when i'm running short

on time) prep the ingredients the night before..SO when i get home all

i have to do is take them out of the fridge and heat up my pan..
