Dearest Donna

 

I suggested Bok Choy because I have so much of this now in my allotment

to use up

 

I could put it in " last " , so that it does not overcook.

Otherwise, I could let my Zucchini mature into a Marrow and use it like

a Squash

Would that do as an experiment? Or would it be a total disaster?

Bok choy is no where near the same as chayote. Chayote is a squash and

it's harder than zicchini and not sweet like butternut or acorn squash.

I really can't compare it to any other vegetable.

If you sub zucchini in this recipe it will be cooked up faster than

the carrots.

I say try it but use when the carrots are 1/2 done.

Chayote takes as long as carrots to cook up. I wish it wasn't so

heavy or I'd send you one.
