Guest guest Posted October 1, 2002 Report Share Posted October 1, 2002 * Exported from MasterCook * Zucchini Ribbons with Basil Butter Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium zucchini, about 1 1/2 lbs 1 tablespoon butter -- cut into small pieces 1 tablespoon oil, preferably olive 2 tablespoons Parmesan cheese -- grated 2 tablespoons fresh basil leaves -- thinly sliced 1/8 teaspoon red pepper flakes Bring pot of water to boil. Meanwhile, with vegetable peeler, slice zucchini lengthwise into ribbons. Add zucchini to boiling water; cook until just tender, 30 to 60 secs. Drain. Transfer zucchini to serving bowl. Add butter, oil, Parmesan, basil and red pepper flakes; gently toss until butter is melted and zucchini are coated.
