Pimento Aioli

Amount Measure Ingredient -- Preparation Method

4 ounces sliced pimentos (1 jar) -- drained

1 large garlic clove

1/2 teaspoon dry mustard

2 teaspoons white wine vinegar

1 egg yolk

1/3 cup olive oil

1/3 cup salad oil

salt

 

In a blender or food processor, whirl pimentos, garlic, mustard, vinegar,

and egg yolk until blended. Combine olive oil and salad oil. With motor

running, add oil mixture, a few drops at a time at first. increasing to a

slow, steady stream as mixture thickens. Season to taste with salt. If

made ahead, cover and refrigerate for up to 3 days.
