Guest guest Posted May 8, 2006 Report Share Posted May 8, 2006 Tortellini Vegetable Lasagna 1 pkg frozen spinach, thawed 1 Tbs olive oil 4 cloves garlic 1 can artichokes, drained well 1 pkg cheese Tortellini White sauce: 1 Tbs butter 1 Tbs flour 1 cup veggie chicken flavoured broth 1/3 cup cream 2 Tbs parmesan pinch nutmeg Bring pot of water to a boil. Drain spinach and squeeze dry ( drain well! ) Cut up artichokes. Put spinach and artichokes in a bowl. Heat skillet, med heat. Add oil and garlic. Sauté one minute. Add spinach and artichokes. Cook a few minutes, and then put them back in bowl. Combine broth, milk, parmesan and nutmeg. Melt butter and oil in garlic pan. Wisk in flour and cook 1-2 minutes. Wisk in broth mixture, and let it bubble. Thicken 1-2 min. When water boils, stir in Tortellini and cook 4 min. Drain. Spray dish w/oil. Put in 1/2 Tortellini in bottom. Layer 1/2 veggies, and 1/2 sauce. Next put in veggies, and last the Tortellini. Top w/remaining sauce. Sprinkle cheese on top. Broil or top brown.
