Guest guest Posted December 6, 2004 Report Share Posted December 6, 2004 Ye Olde Delicious Nut Roast 1 cup ground peanuts 1 cup cooked lentils 2 onions, finely chopped 1 large carrot, grated 2 sticks celery, finely chopped 2 cloves garlic, crushed 1 1/2 cups wholemeal breadcrumba 1 tsp each - cumin, coriander, tumeric & caraway seeds 1 tbs egg-replacer or 1 tbs cornflour mixed with 2 tbs water Saute onions, garlic, celery & carrot in a little oil. Add the spices then mix well with the peanuts, lentils, breadcrumbs & egg-replacer. Press into a greased loaf tin & bake in a pre-heated oven (moderate) for about 30 mins.
