This recipe uses regular oatmeal, not the refined, quicker-cooking type. Oat-Turnip Loaf (from The New McDougall Cookbook by John McDougall, MD, and Mary McDougall) 5 to 6 medium turnips 2/3 cups unsweetened applesauce 1 1/2 cups rolled oats 1/4 cup water Cut turnips into large chunks. Place in a sauce pan with water to cover. Cook over medium heat until tender, about 25 minutes. Drain. Preheat oven to 350º When the turnips are cool enough to handle , peel away the tough outer skins and mash with a potato masher. Place in a bowl and add the remaining ingredients. Mix well. Press into one large (9 1/4 x 5 1/4 inch) nonstick loaf pan. Bake for 1 hour until set. Let rest 15 minutes.
