Vegetarian Casserole

Amount Measure Ingredient -- Preparation Method

3/4 cup brown or white rice

1 cup sliced mushrooms

1 cup sliced carrots

16 ounces cooked kidney beans -- drained and rinsed

1/2 cup peanuts, dry-roasted unsalted

1/4 cup chopped onions

1 1/2 cups kitchen basics roasted vegetable Stock

1/2 cup grated cheddar cheese

 

Preheat oven to 250F. Pour rice in bottom of a 2 quart casserole. Add mushrooms,

carrots, beans, peanuts and onions. Mix together; add the vegetable stock. Cover

and bake 1 hour, stirring after 30 minutes. Remove and sprinkle cheese on top.

Allow to cook and cheese to melt 5 minutes.
