Guest guest Posted September 12, 2001 Report Share Posted September 12, 2001 * Exported from MasterCook * " Live " Almond Milk Recipe Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole raw almonds -- soaked in 3 cups water for 24 hours, drained and rinsed 3 cups purified or spring water (divided use) 2 honey dates -- pitted (2 to 4) 1/2 tsp. vanilla extract (optional) Put almonds in a blender with 1 1/2 cups of water, dates, and vanilla and puree until smooth and creamy. (Use as much or as little water as necessary to keep the blender mixing.) Add remaining water and blend again. To remove skins and pulp, press puree through a fine mesh strainer, sprout bag, or cheesecloth-lined colander. Reserve the pulp for unbaked " cookies " , cakes, or croquettes. You can make it as thin or as creamy as you like. If you want your vegetarian recipe very creamy, try adding a banana and/or a teaspoon of nut butter to the almond milk mixture.
