Guest guest Posted September 8, 2001 Report Share Posted September 8, 2001 * Exported from MasterCook Mac * White Bean Soup Recipe By : Mr. Food's Italian Kitchen by Art Ginsburg Serving Size : 5 Preparation Time :0:00 Categories : Italian Soups, Stews & Chilis Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 1 medium onion -- finely chopped 1 1/2 cups water 20 ounces canned cannellini beans -- undrained 15 1/2 ounces canned Great Northern beans -- undrained 2 vegetable bouillon cubes 1 teaspoon Italian seasoning 1/2 teaspoon garlic powder In a large soup pot, heat the oil over medium-high heat. Saute the onion for 5 to 6 minutes, or until golden. Add the remaining ingredients and bring t a boil. Reduce the heat to medium-low and simmer for 8 to 10 minutes, or until heat through. - - - - - - - - - - - - - - - - - - NOTES : The sizes of cans of beans vary by manufacturer; as long as the sizes are about the same, this recipe will come out fine.
