Zucchini Pizzas

3 medium zucchini -- sliced in half

1 tablespoon oil

1 tablespoon tamari or Bragg's

1 tablespoon water

2 teaspoons dried oregano

1/4 teaspoon dill

1/4 teaspoon dried basil

1 cup tomato sauce

Cheezy Dip

 

Slice the zucchini in half down the middle, lengthwise.

 

On insides of each piece, slide a fork from end to end, with pressure, to form

grooves.

 

Make a marinade sauce of the oil, tamari, water, and herbs. Drop by spoon into

the grooves evenly. Cover with tomato or marinara sauce. Then cover with

Cheezy Dip and bake at 350F until zucchini are quite soft, 30-40 minutes.

Cheezy Dip

1/4 to 1/3 cup oil

1 pound tofu -- rinsed well

1/4 cup Bragg's or sea salt, to taste

5 tablespoons nutritional yeast

1/2 cup water

dash garlic powder

dash onion powder

VeganRella cheese (optional) -- grated

 

yields 4 to 5 cups. In a food processor, using the 'S' shaped blade, blend all

ingredients until smooth and creamy.

 

*Add grated VeganRella nondairy cheese and whiz for an even more flavorful dip.

*Also can be used as a topping for baked casseroles.
