I've modified the idea. * Exported from MasterCook * Hearty Lentil Salad Vegetarian Recipe By :Salads by Cornelia Adams Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound french green lentils 1 5-ounce each onion 2 bay leaves 2 whole dried cloves salt to taste 8 ounces carrots 1 red bell pepper 1 yellow bell pepper 1 bunch green onions 7 tablespoons pumpkin seed oil or olive oil 3 tablespoons red wine vinegar 2 teaspoons Dijon mustard pepper -- to taste pinch sugar 1. Place lentils in a pot and cover with cold water; enough to keep the lentils submerged overnight. generous. Cover the pot and soak the lentils overnight. 2. The next day, peel the onion. Stick the bay leaves and cloves into the onion and add it to the pot with the lentils. 3. Bring the lentils to a boil in the soaking water with 2 tsp salt. Reduce the heat to low and simmer the lentils., covered, until tender (30 to 40 minutes). Transfer the lentils to a large bowl. Remove the onion, bay leaves and cloves. 4. Peel the carrots and coarsely grate into strands or shreds; or finely julienne. Add carrots to the bowl with the lentils. 5. Trim and wash and cut the bell peppers into a small dice. Trim and wash the green onions, slice them finely. Add these vegetables to the bowl. 6. In a small bowl, whisk together the oil and vinegar with the mustard. Season with pepper and a pinch of sugar. Pour dressing over the lentils and mix well. Allow the salad to stand, covered, for 20 minutes to blend the flavors. Serve. Recipe adapted from " Hearty Lentil Salad " in Salads by Cornelia Adam. The printed variation fried 10 ounces bacon until crisp; Crumble and add to the lentils. Combine bacon fat drippings (6 to 7 tbs) with 3 tbs red wine vinegar. Add to lentils and toss. This would be step 4 in the above directions. If you want a smoky flavor, add a chipotle or a smoky bbq sauce thinned with vinegar at the end of step 3.
