Sue Warm Potato Salad With Fresh Herbs 2 lbs. Yukon Gold or Red potatoes 6 Tbsp. olive oil 3 Tbsp. red wine vinegar (or lemon juice) 1/4 cup chopped fresh parsley or cilantro 1 Tbsp. chopped fresh sage 1 tsp. salt dash of black pepper 1/2 cup chopped red onion Paprika for garnish Peel potatoes; cut into 1 1/2-inch pieces. Place potatoes in steamer basket; over high heat bring water to boil. Cover; reduce heat to simmer. Cook until potatoes are tender, 20 minutes. Meanwhile, in large serving bowl combine oil, vinegar, parsley, sage, salt and pepper; add onion. Transfer warm potatoes to bowl with dressing; toss gently to coat, sprinkle paprika over top.
