Zucchini Patties

Source: Mary Ann/homeschool list

 

9 cups grated zucchini

4-6 cups quick oats (or quinoa flakes for gf version)

10 tsp. chicken-style seasoning

1-2 tsp. salt

5 tsp. nutritional yeast flakes

4 finely chopped onions (do in blender or food processor)

2 cups pecan meal

1-3 cups dried bread crumbs (gf if necessary)

 

Mix the above ingredients together and add soy milk or water, if needed.

(Usually not needed as the zucchini has quite a bit of liquid) Spray

cookie sheet or pyrex dish. Bake 15 min. on each side or till crisp.

Bake at 350.

Thank you for this recipe (and so many others) LaDonna.

 

I'm very dependent on recipes, so even though I eat chicken, I'm not

sure what a " chicken-like " seasoning would be. Any suggestions and

proportions would be appreciated.

Susan, there are several types of 'chicken-like' seasoning recipes in our

archives. But, it's usually easier to buy it pre-made. I use two brands

and they are gluten free and vegan. One is called McKay's Chicken Style

Seasoning (there is also a non-vegan version; read the label) and the other

is called Bill's Best Chicknish'. Both can be purchased at most health food

stores. I find them a staple in my vegan/gluten-free kitchen.
