Guest guest Posted April 10, 2002 Report Share Posted April 10, 2002 Source: New recipes from the Moosewood Restaurant Serves: 4 to 6 Middle Eastern Carrot Salad An easy, light, and refreshing salad, sparkling with lemon and mint. Maple syrup gives it an interesting twist. 4 cups grated carrots 3 TBS fresh lemon juice 3 TBS vegetable oil 1/2 tsp. ground coriander seeds 1/4 tsp. salt 2 tsp. chopped fresh mint ( 1/2 tsp dried) 1 TBS chopped fresh parsley 1 to 2 tsp. honey, sugar, or maple syrup ( optional) Mix all the ingredients together and chill at least one hour before serving.
