Curried Eggplant Casserole

1 1/2 pounds eggplant

1/3 cup extra-virgin olive oil

1 1/2 tablespoons curry powder

Salt and freshly ground black pepper

2 medium onions -- finely chopped

1 green pepper -- cored, seeded and finely chopped

3 cloves garlic -- minced

1 tablespoon minced fresh ginger

1 cup chopped well-drained canned plum tomatoes

1 tablespoon minced fresh mint

1 tablespoon minced cilantro

6 ounces fresh goat cheese

1 tablespoon dry bread crumbs

1 1/2 cups basmati rice -- steamed

 

Preheat broiler.

 

Cut the eggplant horizontally into slices a half-inch thick. Spread on baking

sheet and sprinkle on both sides with three

tablespoons olive oil. Sprinkle with one tablespoon curry powder and season

with salt and pepper.

 

Cut any slices more than three inches in diameter in half. Very large slices

should be quartered. Broil eggplant, turning once,

until attractively browned on both sides.

 

Heat two tablespoons oil in large, heavy skillet. Sauté onion over medium heat

until tender but not brown. Add green pepper,

garlic and ginger, sprinkle with remaining curry powder and continue to sauté

until pepper is tender. Stir in tomatoes. Season to

taste with salt and pepper and stir in mint and cilantro.

 

Preheat oven to 350 degrees.

 

Spread a quarter of the tomato mixture into the bottom of a one-and-a-half-quart

baking dish about two inches deep. Arrange a layer

of eggplant over tomato mixture, then crumble a third of the goat cheese over

it. Repeat twice more, finishing with a layer of the

tomato mixture. Sprinkle with the bread crumbs and drizzle the remaining

tablespoon of olive oil on top.

 

Put in the oven and bake 25 minutes, until heated through. Serve at once with

basmati rice.
