Guest guest Posted February 17, 2001 Report Share Posted February 17, 2001 * Exported from MasterCook * Raspberry Walnut Dressing Recipe By : Marie Oser Serving Size : 1 Preparation Time :0:00 Categories : Salad Dressings Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 package lite silken tofu - extra firm 1/2 cup lite soymilk 1 tablespoon olive oil 3 tablespoons raspberry vinegar 1 garlic clove -- peeled 2 scallions -- sliced 2 tablespoons dried cherries 2 tablespoons walnut pieces 1 tablespoon liquid Fruitsource -- or to taste OR substitute sugar 2 tablespoons mellow white miso 1 teaspoon dried parsley In food processor, blend tofu until smooth. Add the next five ingredients and process. Add the next (last) five ingredients, first pulse, then blend. Dressing should be smooth with bits of fruit and parsley. Chill at least one hour. Makes 3 cups. *AUTHOR'S NOTES* The secret ingredient in this creamy dressing is dried cherries, which add a special zing.
