Spinach Salad with Crispy Onions in a Sweet Onion Dressing

1 cup mushrooms

2 bunches spinach -- well-rinsed, trimmed

1 cup cherry tomatoes

1 cup Sweet Onion Dressing

Crispy Onions Rings

 

Cut mushrooms in quarters and rinse to remove any dirt.

 

Spray a saute pan with cooking spray and cook mushrooms over low heat until just

soft, about 3 minutes. Remove from heat.

 

Wash cherry tomatoes and cut in half lengthwise.

 

Place spinach, mushrooms, and cherry tomatoes in a large salad bowl and toss

with dressing.

 

Place a portion of salad on plates and garnish with Crispy Onion Rings.

Crispy Onions Rings

2 onions -- peeled

3/4 cup all-purpose flour

1/2 cup egg replacer

3/4 cup bread crumbs

1 teaspoon dried oregano

1 teaspoon dried basil

1 1/2 teaspoons granulated garlic

1 1/2 teaspoons granulated onion

1/2 teaspoon sea salt

 

Preheat oven to 400 F. Spray a baking sheet once with cooking spray. Set

aside.

 

Slice onions widthwise. Break apart into individual rings.

 

Line up 3 mixing bowls. Into the first, put the flour. Into the second, put

the egg replacer. In the third, mix together the bread crumbs, herbs, spices

and salt.

 

Dip each onion ring into the flour, then into the egg replacer and finally into

the breadcrumbs. Place on prepared baking sheet.

 

When you have assembled all the onions rings on the sheet, bake in the preheated

oven until rings are crispy and light brown, about 20 minutes. (You can freeze

the prepared onions before they[re baked, then bake when needed.)

Sweet Onion Dressing

1/2 cup mirin

1/2 cup low sodium tamari soy sauce

1 teaspoon granulated onion

canola oil cooking spray

 

Slice onions lengthwise and then cut the slices into thin sliver.

 

Spray a saute pan once with cooking spray. Add onions and cook over low heat

until onions are softened, and light brown, stirring occasionally, about 10

minutes.

 

Place cooked onions, vinegar, mirin, tamari sauce and granulated onion in a food

processor fitted with a metal blade or in a blender and puree.

 

This dressing will keep for 1 week, tightly covered, in the refrigerator. A

glass container is recommended for keeping it fresh.
