yummy cornbread

I thought I would share an easy and delicious cornbread recipe that my

son, Berkeley (17 months), gobbled down tonight. The recipe came from

someone in our local veg group here in Austin.

 

2/3 cup maple syrup

1/3 cup canola oil

1 cup soy milk

1 tsp. salt

1 Tbsp baking powder

1 cup organic cornmeal

1 cup whole wheat flour

 

Mix all ingredients and bake for 35 minutes at 350F in a square glass

pan (9x9).

 

Enjoy!

I made this tonight for my family and it's completely gone! They *loved* it.

Thanks so much for the recipe. It was SO fast and easy. Note: here in the

rocky mountain region, it baked in 15 minutes.

I'm so glad you liked it! It really is the perfect recipe--fast, easy,

and it always comes out great! My husband and son *love* it for dinner

and for breakfast too.
