Guest guest
Here's another recipe from the Clueless Vegetarian cookbook. This sounds too easy and it is and very delicious. Bombproof Baked Macaroni Casserole 1 small onion, chopped 1 1/2 cups uncooked elbow macaroni 1 cup cubed cheddar cheese 1 cup water 1 teaspoon salt pepper to taste 1 (28 oz) can diced tomatoes 1 cup bread crumbs 1 tablespoon butter or margarine Dump all the ingredients except the bread crumbs and butter into a well greased casserole dish. Yes, everything, just like that. Stir well. Cover with a lid or foil and bake at 350 F. for one hour. You can lift the lid about halfway through the cooking time and give the mixture a stir, if you like but it's not necessary. Meanwhile melt the butter in a small skillet over medium heat, add the bread crumbs and cook, stirring for 8 to 10 minutes, until crumbs are lightly toasted. After casserole has baked one hour, remove lid and sprinkle the buttered crumbs over top. Return to the oven, place under the broiler element, and broil for 3 to 5 minutes, until browned. Watch very carefully and do not leave the room. DSL Something to write home about. Just $16.99/mo. or less
