Guest guest Posted July 29, 2003 Report Share Posted July 29, 2003 Zucchini Relish Makes 4 pints. 4 to 4 1/2 pounds of zucchini squash 2 medium onions 1 sweet red pepper 2 TO salt 2 CO sugar 1 CO vinegar 1 CO water 2 tsp celery seed 1 tsp ground turmeric 1 tsp ground nutmeg 1/8 tsp pepper 1. Cut up vegetables; process in food processor, coarse texture. 2. Add salt. Cover; refrigerate overnight. 3. Rinse in cold water. Drain well. 4. In a 4 or 5 quart kettle, combine vegetable mixture, and spices. Bring to boil. 5. Cover; boil gently for 10 minutes; stir often. 6. Ladle hot mixture into hot, clean pint jars; leave 1/2-inch headspace. 7. Prepare lids according to manufacturer's directions. Wipe jar rim. Adjust lid. 8.
