Guest guest Posted July 29, 2003 Report Share Posted July 29, 2003 Zucchini Nut Loaf Makes one loaf. 1 C grated zucchini squash 1 C sugar 1 egg 1/2 C cooking oil 1 1/2 C all-purpose flour 1 tsp ground cinnamon 1/2 tsp baking soda 1/2 tsp ground nutmeg 1/4 tsp baking powder 1/2 tsp salt 1/4 tsp finely shredded lemon peel 1/2 C chopped walnuts 1. In mixing bowl beat together zucchini, sugar, and egg. Add cooking oil; mix well. 2. Stir together flour, cinnamon, baking soda, nutmeg, baking powder, salt, and lemon peel. 3. Stir into zucchini mixture. Fold in walnuts. 4. Pour into a greased 8 1/2x4 1/2x2 1/2-inch loaf pan. Bake at 325F till done, 60 to 65 minutes. Cool in pan on rack for 10 minutes; remove from pan.
