Guest guest Report post Posted October 17, 2001 This is really good. I plan to use it for Thanksgiving. Don't really wanna eat something that came out of Big Birds... well you get the picture.!!! LOL Zucchini Supreme .. 3 cups water 6 cups quartered, thinly sliced zucchini 1 cup shredded carrot 1/4 cup chopped onion ( or more) 1 tsp. salt 1/2 tsp. garlic pdr. 1 can condensed Cream of Mushroom Soup 8 oz sour cream substitute 1/2 cup margarine, melted 4 cups seasoned stuffing mix In a large kettle, bring water to a boil. Add zucchini, carrot, onion, and salt. Cook 8-10 min, or just until vegetables are tender. Drain. In a large bowl, combine the soup, sour cream sub., and garlic pdr. Fold in the vegetable mxture. Combine croutons and melted margarine. Mix into the vegetable mixture. Put in oiled 13x9 " bake dish. Cover and bake @ 350 degrees F. for 30 minutes. Uncover and bake for an additional 10 min., or until golden brown. Makes 8-10 servings. . .. I added a litle chopped bell pepper to cook with the zucchini, for this dish.
