Zucchini Supreme

This is really good. I plan to use it for Thanksgiving. Don't really

wanna eat something that came out of Big Birds... well you get the

picture.!!! LOL

 

Zucchini Supreme

..

3 cups water

6 cups quartered, thinly sliced zucchini

1 cup shredded carrot

1/4 cup chopped onion ( or more)

1 tsp. salt

1/2 tsp. garlic pdr.

1 can condensed Cream of Mushroom           Soup

8 oz sour cream substitute

1/2 cup margarine, melted

 

4 cups seasoned stuffing mix

In a large kettle, bring water to a boil. Add zucchini, carrot, onion,

and salt. Cook 8-10 min, or just until vegetables are tender. Drain. In

a large bowl, combine the soup, sour cream sub., and garlic pdr. Fold in

the vegetable mxture.

Combine croutons and melted margarine. Mix into the vegetable mixture.

Put in oiled 13x9 " bake dish. Cover and bake @ 350 degrees F. for 30

minutes. Uncover and bake for an additional 10 min., or until golden

brown.   Makes 8-10 servings.

I added a litle chopped bell pepper to cook with the zucchini, for this

dish. And you might sprinkle Baco-Bits on top before you bake.

Just thought to say that cream of mushroom by Campbell uses Chicken stock or chicken fat(i think) the Cream of Celery has chicken fat in it, Western family "Cream of Mushroom" doesn't (i just checked) suzy - caroltreehugger Wednesday, October 17, 2001 12:47 AM Cc: My-Recipes Zucchini Supreme This is really good. Thanks so Much for the info about the mushroom soup. I wasn't sure if

ANY of them were vegan. Sure glad to know that one is. Hugs, Carol
