Zucchini Cake

CAKE

1 pkg yellow cake mix (500g)

1 pkg instant vanilla pudding (135g)

4 eggs

1/4 cup oil

3 cups grated zucchini

1 tsp cinnamon

1/2 tsp cloves

1 cup chopped pecans

Lemon Glaze (recipe below)

LEMON GLAZE

1 cup sifted icing sugar

1/2 tsp grated lemon rind

1 tsp lemon juice

4 tsp milk

 

Cake: In the large bowl of an electric mixer combine cake mix, pudding

powder, eggs, oil, zucchini, cinnamon, cloves and pecans. Beat together for

4 minutes. Pour into a greased and floured 12 cup Bundt pan. Bake at 350F

for 55-65 minutes or until cake tests done. Cool in pan for 10 minutes.

Remove from pan. Cool completely on a wire cake rack. If desired, ice with

Lemon Glaze.

 

Lemon Glaze: In a small bowl, combine all ingredients. If glaze is too

thick, add a few drops of milk. If glaze is too thin add 1-2tbsp of

additional icing sugar. Immediately drizzle over cake.
