Does anyone have any vegan chocolate cake (frosting too?) or chocolate chip cookie recipes? Also any website info on where I can find lists of vegan vs. non-vegan ingredients. Guest guest Posted November 10, 1999 Report Share Posted November 10, 1999 Hi Betti, The American Vegetarian cookbook is full of wonderful recipes!! Chocolate Carrot Cake 1/2 C sunflower oil 2 C grated carrot, lightly packed 1/2 Cunsweetened applesauce 2 C whole-wheat pastry flour 1C maple syrup 2 tbs baking soda 2 tbs coffee substitute 1/4 tsp salt 1 C tofu, soft or firm 1 tsp ground cinnamon 1. Preheat oven to 350. In food processor, blend oil, applesauce, and sweetener for 1 minute. Add carob powder, coffee substitiure and tofu. Continue to process. Add carrot and pulse several times. 2. In a large mixing bowl, combine dry ingred. Make a well in center and add carob mixture. Beat thoroughly to combine. 3. Oil a 8- 10 C bundt or tube pan. Spoon batter into pan and bake for 50-55 mins, or until a toothpick inserted in center comes out clean. Cool on wire rack before removing from pan. Creamy Carob Frosting 3 tbs soy margarine 1/4 C almond milk 1/2 c carob chips 1 tsp vanilla extract 1/2 c fruitsource, or 1/4 c honey In a saucepan, combine the ingredients and warm over med-low heat while striring continuously with a wooden spoon.
