Greetings Members: As always, depending on where you live (Wash., D.C. Metro Area) and whether you're vegan or raw vegan you may find something here of use. A brighter side to look at is that once the Market opens, coming from D.C. and MD (Silver Spring, Rockville, Wheaton, Kensington), Georgia Avenue will take you right into Olney, MD. vegan recipe! Cauliflower Soup (Vegan) Ingredients:1 head of garlic1 head of cauliflower4 Tablespoons olive oil, split1 medium onion4 cups (i box) Imagine or Pacific No-Chicken Chicken Broth1 cup Silk Soymilkpepper to taste1/2 cup rice shredded cheeseToasted wheat French bread, optional for garnish3 slices cooked veggie

bacon, optional for garnish Preheat oven to 350 degrees F Take one head of garlic and cut off the topmost portion. Drizzle with olive oil, place on foil, partially cover, and bake in the oven for about 45 minutes, until the roasted garlic is golden brown. Set the garlic head aside until it is cool enough to handle. While the garlic is baking, saute one medium chopped onion in 2 Tablespoons olive oil until golden and translucent. Do not burn. Set aside. In saucepan, separate one head of cauliflower into flowerettes and cook them in the pan with enough water to cover until the cauliflower is tender. Drain and set aside. In the saucepan with the cauliflower, add the onions, squeeze the garlic heads into the pan (discarding the garlic skins). Add 4 cups of No-Chicken Chicken Broth (Imagine or Pacific brand). Cook for about 20 minutes. Add 1 cup Silk brand plain soy milk or soy cream and

pepper to taste and cook over medium heat for about 5 minutes. Cool slightly and blend everything in a blender or processor. Correct seasonings. Add 1/2 cup rice shredded cheese and heat thoroughly. Enjoy!
