I recommend Soymage - they make a Parmesan cheese (and other things I've yet to try) - it's available at health food stores and on the web through www.dixiediner.com along with lots of other things, and Tofutti cheese, available at most health food stores. They make good cream cheese, sour cream, and various sliced cheese including a roasted garlic that's really good. There are many recipes in the archives for all kinds of cheeses and sour creams. Casein is what makes cheese melt and get " stretchy " . These don't, but are otherwise good. I've got to try that feta cheese substitute someone posted a while back - feta is my weakness.
