Heart-healthy Apricot Muffins

1 cups all-purpose flour -- (1-1/2)

1/8 teaspoon salt

1/2 cup soy flour

1 egg

1/3 cup sugar

1/2 cup each soy milk and water

1 tablespoon baking powder

1 tablespoon vegetable (soybean) oil

1 teaspoon ground cinnamon

1/2 cup each crushed pineapple and dried apricots

1/4 teaspoon ground nutmeg

 

Combine flours, sugar, baking powder, spices and salt; mix well. Make a well in

the center and add egg, soy milk, water, oil, pineapple and apricots; mix only

until moistened. Spoon mixture into oiled muffin tins. Bake at 400°F, 12 to 15

minutes or until wooden pick inserted near center comes out clean. Makes 1

dozen.
