Guest guest Posted December 15, 2007 Report Share Posted December 15, 2007 * Exported from MasterCook * Zucchini Chili - 3 pts, 26g carbs, 9g fiber Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : LowerCarbs Vegan WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups grated unpeeled zucchini -- (4-6 cups) 1 cup celery -- sliced 1 medium onion -- chopped 3 tablespoons vegetable oil 1 can tomato sauce -- (15 oz.) 15 ounces water -- one tomato sauce can full of water 1 can whole tomatoes -- & juice (29 ounce) 2 tablespoons chili powder -- (2-3 tablespoons to taste) 1 teaspoon garlic salt -- + 3 teaspoon of salt 2 tablespoons sugar 1 teaspoon black pepper 1/2 teaspoon red pepper 1/2 cup pitted ripe olives -- sliced 1 can kidney beans -- (15 ounce) 1 cup fresh sliced mushrooms Sauté grated zucchini, celery and onion in hot oil in large kettle or saucepan until celery is tender, but not browned, about 6 minutes. Add tomato sauce, water, tomatoes and juice, chili powder, garlic salt and salt, sugar and pepper. Simmer slowly, uncovered, 1 to 1 1/2 hours. Add olives, kidney beans and mushrooms. Simmer another 10 to 15 minutes. Serves 8.
